BH supper, my version of huevos rotos (spanish potatoes with “broken eggs”)

We have eaten this in Spain numerous times and it’s absolutely delicious. Simple and always great served with an ice cold 🍺

City eating at its best - simple and delicious

A recent visit to Rome included an incredible food trail where we began with fried artichoke and sipped fizz in the street and I never took anymore pictures as it felt like an insult to the immersive moment of total food enjoyment.

And during our weekend we squeezed in two visits to our favourite paninoteca (sandwich shop) because it was so delicious once just wasn’t enough.

Off-piste recipe

I couldn’t find a brownie recipe that seemed quite right so I went off-piste and made one that worked.
Lots of dark chocolate, cocoa, cranberries and pecans with almonds and sea salt on the top. Pretty happy with how it worked and tasted.

Fresh rhubarb, brown sugar and 20 minutes in the oven. Now I have a jar of slightly tart poached rhubarb to accompany my Greek yoghurt and homemade chocolate brownies 😋

How do you make yours?

It’s important you taste as you go. Season well.

I add more wild garlic and seasoning as I go, until I’ve made a thick and tasty garlic pesto. If you love Parmesan and Pine nuts, you can add more.

My Recipe:
Colander of washed wild garlic
200 ml Extra Virgin Olive oil
1/4 to 1/2 cup of toasted pine nuts
1 cup of Parmesan
Salt and ground black pepper
