After 10 years running our fine dining restaurant we are taking a pause from daily operations to focus on strengthening our industry. This community has been there for us and we are ready to give back.💫
If you are in need of strategic consulting/operational advisory (think refreshing and refining your service standards, food costing, improving efficiency, better employee retention and all things hospitality) we are here to help.
And we’ll be around. Maybe a pop-up or two here and there…
Looking forward to this journey.

10 years in this special place.
Handed the keys back to the building yesterday.

Both of us sick as a dog at present, since when you pump the brakes your body says ‘okay…you can get sick now 👌….’
But @shaunmccrain and I have been able to reflect on the history of our beloved @copineproject and what it brought so many. Thank you to all of the people who believed in and supported this dream of ours.

Our goal is to make sure that our industry continues to evolve, adapt and - not just survive - but thrive. For the love of the craft. Because the impact that hospitality can make in someone’s life is so important.
Never underestimate human connection.
Be the change.
See you on the other side✨ taken in Copine by @copineproject

That’s that!

After 4 years it’s a wrap on The Seattle Restaurant Podcast. We go out with a bang with a live episode with all our friends recorded at the newly open @bardojo at @seattleartmuseum in Downtown Seattle.

Thank you to all the guests (except that one, you know who you are), the listeners, my amazing co-host Dr. @chefshubert and of course, you!

I am working on another podcast concept, details are in the episode.

I’ve been around the globe, and I can honestly say we have one of the best restaurant cities in the world. I love the creativeness, the passion, the ingredients, the spirit of collaboration, and all the hard working chefs, servers, prep cooks, dish washers, and everyone involved in putting out that perfect plate.

I love you Seattle. Thank you for the support. Hit up a local eatery TODAY!
