Who knew cottage cheese could be this delicious? Whipping up the VIRAL cottage cheese flatbread for a quick, tasty and protein packed meal ⬇️⬇️⬇️

This one blew me away - you definitely need to try it! 🤯

Ingredients 
1 cup cottage cheese
2 eggs
Optional: Garlic powder & Italian seasoning

Directions 
1. Mix everything together and born until smooth
2. Pour mixture onto a parchment lined pan and spread evenly, 
3. Bake for 30-40 minutes at 350°F/180°C

Zero meal prep? These garlic Parmesan chicken skewers are my kind of dinner 🤌😍

A quick seasoning, into the air fryer, then that garlicky Parmesan butter… SO good. Add whatever sides you’ve got and dinner’s sorted 🙌

Save this for a night when you’ve got chicken and no plan 

Garlic Parmesan Chicken Skewers

Chicken:
• 500g chicken breast or thighs, cubed
• 1 tbsp olive oil
• 1 tsp each garlic powder, onion powder and paprika
• Salt & pepper

Garlic butter:
• 3 tbsp butter, melted
• 2 garlic cloves, minced
• ¼ cup grated Parmesan
• Parsley and chilli flakes, optional
• Salt & pepper

To finish: extra grated Parmesan

1. Toss chicken with oil and seasoning, then thread onto air-fryer-safe skewers.
2. Mix the garlic butter. Reserve half in a separate bowl for finishing.
3. Brush chicken with the remaining half.
4. Air fry at 200°C for 10–12 minutes, turning halfway, until cooked through. Cook in batches if needed.
5. Brush with the reserved garlic butter and sprinkle with extra Parmesan. by @countdown_til_dinner

2-Ingredient Egg White Cheese Bites

You’ll need:
• 140g grated Parmesan
• 2 egg whites (60ml)

How to make them:
1. Mix the Parmesan and egg whites in a bowl until you have a thick mixture that holds together.
2. Roll into small, bite-sized balls and place on a lined tray.
3. Freeze for 2 hours, or until firm.
4. Preheat your air fryer to 180°C. Place the frozen bites in a single layer with space between them.
5. Air fry for 10 minutes, until golden and cooked through.
6. Let them cool for a few minutes before digging in

Air Fryer Cinnamon Roll Tortilla Hack

You’ll need:
2–3 tortillas
3 tbsp butter, softened
2 tbsp brown sugar (or coconut sugar)
1 tsp cinnamon

Frosting:
60g cream cheese, softened
30g butter, softened
3 tbsp icing sugar (or maple syrup)
½ tsp vanilla
1–2 tsp milk (optional)

How to make it:
1. Butter one side of each tortilla
2. Sprinkle over cinnamon + sugar
3. Roll tightly + slice into mini rolls

Love pancakes but can’t be bothered flipping them? This is your breakfast 🤎

One bowl, one baking dish and everyone gets warm pancakes at the same time. We do berries & chocolate chips to keep everyone happy!

Save this for your next slow morning 🥞

Ingredients
1 ripe banana
3 eggs
2 tbsp maple syrup or honey
¾ cup milk
1 tsp vanilla
2 tbsp melted butter or neutral oil
200g plain flour
2 tsp baking powder
Pinch of salt
Berries or chocolate chips

Method
Mash the banana, then whisk in the eggs, maple syrup, milk, vanilla and melted butter.
Gently stir in the flour, baking powder and salt until just combined.
Pour into a greased baking dish, add your toppings and bake at 190°C (170°C fan-forced) for 20–25 minutes, until golden and the centre is just set.

Creamy Garlic Mushroom Chicken 

This is the dinner everyone needs in their rotation!  Easy, creamy, full of flavour and one the whole family will actually ask for again.

Serves 4 | 25 mins
Ingredients
4 chicken breasts (sliced lengthwise into thinner pieces)
Salt + pepper
¼ cup plain flour
2 tbsp olive oil
4 tbsp butter, divided
500g mushrooms, sliced
4 garlic cloves, minced
1 tsp thyme
¼ cup white wine, optional
1 cup chicken stock
1 cup thickened cream
½ cup grated parmesan
Parsley, optional

Method
Slice chicken breasts in half, season and lightly coat in flour.
Cook in olive oil + 1 tbsp butter for 4–5 mins each side until golden. Remove.
Add remaining butter and mushrooms and cook until golden and caramelised. Add garlic + thyme, then wine if using.
Add chicken stock and scrape up all that flavour from the pan. Reduce slightly, then stir through cream + parmesan until thick and creamy.
Return the chicken, spoon over the sauce and finish with parsley + extra parmesan.

The dessert quesadilla you didn’t know you needed!

Crispy on the outside, warm and gooey in the middle and takes about 5 minutes to make.
Chocolate + strawberries + banana + peanut butter = elite.

Ingredients ⬇️
🟠 1 tortilla
🍫 1 tbsp hazelnut spread
🍓 Strawberries, sliced
🥜 1 tbsp peanut butter
🍌 Banana, sliced
Optional: crushed nuts

How to make it:
1️⃣ Cut a slit from the edge to the centre of the tortilla.
2️⃣ Add a different filling to each quarter.
3️⃣ Fold each section over until you have a triangle.
4️⃣ Toast in a pan or sandwich press until golden, crispy + melty.

30g vanilla protein powder
½ cup (50g) almond flour

TOPPING: 100g melted chocolate

Method
1. Mix peanut butter, protein powder, almond flour, maple syrup, vanilla and salt.
2. Stir through chocolate chips and press into a lined mini muffin tray.
3. Top with melted chocolate.

AIR FRYER RICE PAPER APPLE PIE 🍎

Crispy, cinnamon-coated rice paper wrapped around warm, gooey apples… the easiest little apple pie fix 

It’s ridiculously easy, needs just a handful of ingredients and is SO good straight out of the air fryer.

The best part? No butter, no flour & low in calories🙌🏼

SAVE this one for when the sweet craving hits!

AIR FRYER RICE PAPER APPLE PIE

Ingredients

* 2 apples, finely diced
* 1 tsp cinnamon, plus extra for coating
* 1–2 tsp maple syrup
* 3 rice paper sheets
* Splash of water
* 2 eggs
* Splash of milk

Method

1. Add apple, cinnamon, maple syrup and a splash of water to a pan.
2. Cook over medium heat for 5–7 minutes, stirring occasionally, until the apple is soft and syrupy.
3. Whisk together the egg, a splash of milk and extra cinnamon. Dip the rice paper into the mixture, coating both sides.
4. Spoon the apple mixture into the centre and fold into a parcel.
5. Air fry at 180°C for 7–9 minutes, flipping halfway, until golden and crispy.

The easiest little fridge snack 😍

Crunchy, chewy, peanut buttery AND covered in chocolate… basically everything I want in an afternoon snack 😂

These take about 5 minutes to throw together, use just 4 ingredients and are SO good straight from the fridge or freezer.

Save this one for when the sweet craving hits 👀

4-Ingredient Rice Cake Crunch Bars
Makes approx. 12 pieces

Ingredients
5 rice cakes, broken into small pieces
½ cup smooth peanut butter
2 tbsp honey or pure maple syrup
½ cup dark chocolate, melted

Method

1. Break the rice cakes into small crunchy pieces.
2. Mix through the peanut butter and honey until well coated.
3. Press firmly into a lined loaf tin.
4. Pour the melted chocolate over the top.
5. Chill for around 30-60 minutes, then slice and enjoy.

❄️ Keep them in the fridge for a chewy bite or pop them in the freezer if you like them extra snappy.

You’d never guess this pancake bowl is under 300 calories 🙌

Soft, fluffy, cake-like AND packed with protein… basically dessert for breakfast without the post-breakfast regret 😂 It takes minutes to throw together and you can switch it up with berries, choc chips or a drizzle of maple 🍓🍫

Ingredients
1 egg
50g high protein Greek yogurt
70ml unsweetened almond milk
30g plain flour
25g vanilla protein powder
1 tsp baking powder
Optional: honey or maple syrup

Method
Mix everything together, pour into a ramekin, add your toppings and bake at 180°C for 20–25 min
