Lactose friendly butterchicken ( I was generous with butter though because I still wanted it more on the richer side 😁)

Ingredients
3 large chicken fillets cubed
1 chopped onion
Ginger and garlic paste
Salt
1tsp Dhania jeera powder
1tsp Garam masala
1tbs Kashmiri masala
1tsp Turmeric powder
Butter
Tomato paste
Lemon juice

Method

Marinate your cubed chicken in the above mentioned spices with 4tbs of plain lactose free yoghurt and the juice of half a lemon . Let this sit for atleast half an hour.

Add this to a hot oiled pan and fry until half way cooked. Remove and set aside.

To the same pot add in a generous amount of butter and allow it to melt. Add in your chopped onions and sautée. Once translucent add in about a tbs of tomato paste and allow it to cook down for approximately a minute. Add your chicken back in and a further 3 tbs of yoghurt. Mix and allow the chicken to cook through. I added a little water to loosen up the mixture and after a few minutes added in more butter and corriander. Then allowed it to cook on medium- low and added a 1/4tsp of garam masala. Left this to cook until it was done.

Finish with freshly chopped coriander (Dhania) and enjoy with rice or garlic butter naan 🤤

Side note: you can definitely leave out the additional butter if you’re wanting to be a bit healthier ☺️

Snack idea 💡🔈

I saw @emilyontoast making these and I wanted to try my own version. It was delicious! 🤤
I cooked mine in the airfryer for 10 mins on 180 degrees and they were perfectly crispy ( although a little more crisp wouldn’t have hurt 🥺)

Tried,tested and loved it 🙋🏽‍♀️🔥

Chicken fajitas 🔥

Ingredients

Two large chicken breasts thinly sliced
1 red pepper
1 green pepper
Half a red onion
Cheese of your choice
Hot sauce

Method
Marinate your chicken for half an hour before the cook using the following spices and ingredients :

Salt, pepper, 1 1/2 tsp masala, 1/4 tsp coriander powder , lemon juice, 1 tsp ginger and garlic paste

To a hot pan add oil. Allow this to heat and add in the chicken. Cook until almost cooked through then add your onions and peppers. Mix until everything is combined. Add your choice of sauce / hot sauce and cook on low until done.

To a plain wrap, add in the chicken and pepper mix. Top with your desired amount of cheese and fold. Toast until cheese is melted and enjoy ☺️

These can be paired with side dishes like sour cream and guacamole if you’re in the mood to be fancy. But for a quick and delicious dinner, this alone will do 🙋🏽‍♀️
