Made (and packed) with love 🍎 These Mini Apple Pies are an A+ lunch box addition! Save the recipe below.

Ingredients
Pie Crust:
-2 C. all-purpose flour
-3/4 tsp. salt
-3/4 C. cold Crisco® All-Vegetable Shortening
-4 to 8 Tbsps. ice cold water
Filling:
-3-4 lg. apples, peeled and diced small (approx. 4 C.)
-2/3 C. brown sugar
-4 tsp. Clabber Girl® Corn Starch
-¾ tsp. Spice Islands® Ground Saigon Cinnamon
-1/8 tsp. Spice Islands® Ground Nutmeg
-2 tsp. lemon juice
-½ tsp. Spice Islands® Pure Vanilla Extract
-4 tsp. butter
-1 egg
-3 Tbsp. milk
-2 tsp. granulated sugar, for dusting

Directions
Pie Crust:
1. Stir flour and salt. Cut in shortening with a pastry blender or fork until pieces are pea-sized.
2. Gradually add water, 1 Tbsp. at a time, stirring until dough holds together and forms a smooth ball.
3. Divide into 2 balls; flatten into 1/2-inch disks. Wrap and chill for 30 mins or up to 2 days.

Filling:
1. Combine apples, brown sugar, corn starch, cinnamon and nutmeg. Toss until coated and syrup forms.
2. Stir in lemon juice and vanilla; set aside.

Assembly:
1. Preheat oven to 425°F. Roll chilled dough on a lightly floured surface to 1/8-inch thick.
2. Cut 12–18 circles with a 3 ½-inch cutter, rerolling dough as needed.
Place circles in a standard 12-count muffin pan. Press down and up sides to the top of each cavity. Refrigerate while making tops.
3. Cut desired top pieces. Add about 3 Tbsp. filling to each crust. Cut butter into 12–18 pieces; place one in each pie.
4. Whisk egg and milk; brush over tops. Sprinkle with sugar.
5. Bake for 20–23 min., until filling is bubbly and crust is golden brown.
6. Cool 15 min. Run a knife around edges and remove pies. Enjoy! by @criscobrand

Ingredients
-4 1/2 cups all-purpose flour
-2 tsp Clabber Girl Baking Powder
-1/2 tsp salt
-1 cup granulated sugar
-1 cup Crisco All-Vegetable Shortening
-2 large eggs
-1/4 cup milk
-1 tsp vanilla extract
-1/2 cup strawberry jam
-1 egg + 2 tbsp milk, beaten (egg wash)

Glaze
-1 cup confectioners' sugar
-2 tbsp whole milk
-1 tsp vanilla extract
-Pink food coloring
-Rainbow ball sprinkles

Instructions
1. Whisk flour, Clabber Girl Baking Powder, and salt. Set aside.
2. Beat sugar and Crisco Shortening until smooth. Add eggs one at a time, mixing after each. Gradually add dry ingredients in 3 additions, alternating with milk. Add vanilla with the final milk addition. Mix just until a soft dough forms.
3. Shape dough into a log, wrap, and roll into an even cylinder. Slice into 16 equal pieces. Arrange on a baking sheet, cover, and refrigerate 1 hour.
4. Heat oven to 350°F. Roll each dough piece between parchment into a 5–6-inch round. Fold sides inward to form a rectangle, then roll to 1/4-inch thick.
5. Pair rectangles by size. Brush one with egg wash, leaving a 1/2-inch border. Add 1 tbsp strawberry jam to the center. Top with another rectangle, press edges together, crimp with a fork, and prick the top. Repeat.
6. Place on a parchment-lined baking sheet. Bake ~25 minutes, until lightly golden. Cool 15 minutes.
7. Glaze: Whisk confectioners' sugar, milk, vanilla, and pink food coloring until smooth.
8. Spoon glaze over cooled hand pies and immediately add sprinkles. Serve warm or cool completely and store airtight for up to 1 week. by @criscobrand

PB&J Blondies
Ingredients
 -6 tablespoons Crisco All-Vegetable Shortening
 -¼ cup creamy peanut butter
 -1 cup light brown sugar, firmly packed
 -1 large egg
 -1 teaspoon vanilla extract
 -½ teaspoon Clabber Girl Baking Powder
 -¼ teaspoon kosher salt
 -1¼ cups all-purpose flour
Topping
 -⅓ cup creamy peanut butter
 -⅓ cup jam or jelly (your favorite flavor)

Instructions
1. Preheat oven to 350°F. Spray an 8×8-inch baking pan with baking spray and line with foil, leaving an overhang on two sides. Lightly spray the foil.
2. Combine the shortening and ¼ cup peanut butter in a microwave-safe bowl. Heat in 15-second intervals until the shortening is softened and melted enough to stir smooth with the peanut butter. Let cool for a few minutes.
3. Stir in the brown sugar, then add the egg, vanilla, baking powder, and salt. Mix until well combined.
4. Fold in the flour just until no dry streaks remain. Spread the thick batter evenly into the prepared pan.
5. Warm the ⅓ cup peanut butter and ⅓ cup jam separately for 10–15 seconds, just until spreadable.
6. Spoon the peanut butter and jam over the batter in small dollops. Swirl gently with the tip of a knife, staying mostly in the topping layer.
7. Bake for 30–35 minutes, until the center is set and no longer jiggles when the pan is gently shaken.
8. Cool completely before lifting out with the foil and slicing. by @criscobrand
