Sprinkles sprinkles everywhere! So many January birthdays. I made a funfetti cake two weekends ago and last weekend I made these! Funfetti biscotti with a lil white chocolate dip. Or an attempt at a dip. My bowl was awkwardly shallow and I was rushing it so sometimes I kind of just used a spatula to slop some on there. Cute tho, right?

Holy heck it is painfully cold outside. RealFeel® 2°F?! It literally hurts to be outdoors right now. But hey, remember summertime? Stone fruits and berries and uncomfortable humidity? Ah yes, those were the days. Summed up in this peach and blueberry upside down cake, using none other than @3springsfruit of course.

I keep thinking about how I should’ve put a few berries right in the center before layering the peaches but I was worried about the purple running. Hmm, actually that might’ve been cool. Next time!

No glamour shots here but I did bake this towering NY style cheesecake for Logan’s birthday in October. It straight up looks like a wheel of cheese doesn’t it? ‘tis a shame about the crack but I swore the wobble zone was more than 3” across and the internal temp hadn’t reached 145° yet so I left it in the oven a bit longer. My b. Next time I’ll put more trust in Stella. Crack or no crack, the birthday boy was happy. Cheesecake is his fave!

Fun fact: (are fun facts ever fun or are they just people wanting to tell you something you never asked?) The *vast* majority of home bakes you see are my first attempts at things. I’ll repeat bakes if it’s something with a good ease:shareability ratio or if I get special requests, but I’m almost always trying something new, and it isn’t always perfect. I’m just having fun, folks.

Bouncy, chocolatey, ultra satisfying mochi brownies. Is there much more to say? I’ll throw in a few more descriptions. Squishy, springy, spongy, chewy, fun, tender, rich, easy, and a perfect solution for chocolate cravings. Ok, I think I’m done now.

These posts are obviously in no particular order; the only thing they have in common is having had occurred between 3/16/20 (official beginning of lockdown) and now.

My first ever royal icing decorated cookies. Yes, ever 😬 I’m mildly ashamed. I lost half the cookies because I dropped the baking sheet by accident, and the piping tip clogged a few times, but I still managed to get something out 🥲 Logan’s mom said they tasted so good she had to hug me immediately after 🥰 but that might be related to the next paragraph —

I also made fresh eggnog for the first time and it was surprisingly good?? Like dangerously good? Previously, I had only tried the painfully sweet bottled stuff that clings to your insides as it goes down. This was light, just a bit sweet, thick from the whipped egg whites, and I now understand eggnog drinkers. Much too easy to drink too much without realizing it 😄

I had some leftover dulce de leche from the chocoflan so I obviously needed to make alfajores! The tenderest, most melt-in-your mouth cookies sandwiched with dulce de leche and rolled in coconut 🥥
.
These cookies are composed of tapioca starch (for a less powdery mouthfeel than the standard corn starch) and AP flour and are so fragile that they shatter if you look at them the wrong way. I know this because only 7/12 of my sandwiches stayed whole 🙃 I figured out the handling strategy a little too late in my assembly process haha. Needless to say, they were still delicious.

Glazed lemon pound cake! 🍋🌀🍰 Gosh, I love how bundt pans dress things up. I had an armful of lemons rescued from the walk-in that were going soft and I wasn’t feeling particularly inspired, as I’m not big on lemon desserts. @cynpereira_ suggested a lemon cake though, which I haven’t made since I was a small child baking with my grandmother. A grand idea, I thought!

@smittenkitchen came to the rescue with this recipe, as it was one that both promised to not be overwhelmingly sweet and one that didn’t require lemon extract. It also used far more lemons than any of the recipes in my cookbook collection, which was a plus. The crumb was dense and plush and the glaze deliciously bright. If anyone wants to attempt it and has questions about the lemon syrup soak conundrum, hit me up and I’ll gladly explain how I got through it! ✨

Homemade Lofthouse cookies! The ultimate cookie to appeal to your inner child. A guilty pleasure of mine, and one I have to fight to resist whenever I walk by those boxes at the grocery store. They’re soft, nearly cake-like (I find the texture irresistible), and melt in your mouth with a sugary indulgence that you feel a little bad about, but then you reach for another.

Thankfully the baking goddess @bravetart has come up with a copycat version, which I am all about. It feels much better knowing what you’ve put into them! I’ve been meaning to bake these for eons; I ordered Swans Down flour months ago solely because I wanted to make them. They did not disappoint! 🥰☁️🍪

I forgot to finish posting my Bloomsday pastries but hey did you know we’re in the midst of a pandemic that is projected to kill millions? It feels... less relevant for now. I’ll be posting my quarantine kitchen projects in the meantime!

Ruffled milk pie, aka galatopita, is like rosettes of phyllo dough draped around a delicate and airy custard, infused here with cinnamon and lemon zest, showered in powdered sugar and more cinnamon. It’s bread pudding’s effortlessly elegant cousin, the one who always has an impeccable wardrobe and never gets caught with anything embarrassing stuck in her teeth. (Ignore the fact that it’s on an upside down paper plate, mkay? This was at the office.) It’s a bouquet of pastry and cream and sugar. It’s lovely, really.

Also, phyllo was surprisingly fun to work with. I think the long and slow defrost + parchment + dish towel regularly spritzed with water from a spray bottle method removed all of the nightmarish aspects that most people fear.

🎶 Isn’t she lovely? 🎶 Before Philly’s sweetheart @iluvmagpie closed, I managed to snag a seat in another pie class. I had taken one earlier but I needed to see with my own eyes, and feel with my own hands, that I could successfully bake a lattice pie. No parbaking trickery involved! Just deliciously jammy blueberry filling enclosed in a gorgeous, flaky, buttery pie crust.

I’ve since baked several pies without a hitch and I think I have Holly to thank. Those conversations and her book gave me the tips and confidence I needed to overcome my fear of pie baking!

Sprinkles are synonymous with happiness so @smittenkitchen’s confetti cookies are perfectly suited for celebrations. I made these for a coworker’s birthday and they were demolished! They’re soft and delicate (pro-tip: great for sandwiching ice cream), yet rich and buttery, packing a strong vanilla flavor (no barely-there joking around here), and absolutely COVERED in rainbow sprinkles. Who could resist? 🌈🍪🎉
