From Ram Country to Conejos County, CO, food science is all over the state 🌽

In a recent collaboration led by @csuextension, our @csu_fshn researcher, Charlene Van Buiten, showed San Luis Valley Area community members how different processing methods can affect the nutritional quality of corn!

Dr. Van Buiten shared the science behind why roasting, rather than boiling, can help retain some of the nutritional quality of corn, highlighting how traditional food practices can help preserve important nutrients!

The event also featured discussions on organic agriculture and pest management, promoting the power of bringing research, education, and community knowledge together 🤝 A hand holds an ear of roasted corn in front of a dome-shaped earthen oven. The corn kernels show a mix of yellow and dark roasted colors, and the oven opening is visible in the background. by @csu_fshn

Meet Eli Schwartz, a talented B.S. Fermentation and Food Science Ram!

After visiting CSU's New Belgium Innovation Lab with the Mycology Club, Eli discovered a passion for food science that led him to pursue a degree in Fermentation and Food Science. Learn more about his CSU experience in this Q&A 👇

Q: What does FSHN and your major mean to you?

A: This major is so much more than fermentation. It explores how food connects cultures, histories, ethics, and global food systems. I've learned about everything from the movement of ingredients across the world to the policy and political action needed to improve our food systems.

Q: How have you gotten involved with your major?

A: I'm a QC/QA Brewing Intern for the Gifford Brewhouse and Ramskeller, where I help ensure products are safe and high quality. I also work at Nuance Chocolate and Little Man Ice Cream, where I get to apply the food safety principles I've learned in the classroom.

Q: What communities or industries do you hope to impact after graduation?

A: I hope to pursue a career in epidemiology and help create policy and legislative changes that make safe, healthy food accessible to everyone.

Q: What's been your favorite CSU experience?

A: Competing in KCSU's Battle of the Bands with my friends in @nokaytheband was an unforgettable experience. 🎸 Person with curly hair plays a silver trumpet during an outdoor nighttime performance while another musician plays an electric bass guitar nearby. Colorado State University’s Department of Food Science and Human Nutrition is excited to welcome Kevin Murray to the faculty as an assistant professor.

What is your teaching philosophy?
I will do my best to lead you to the water, but you must be the one to drink. Essentially, you get out of your classroom and research experiences what you put in. Also, if you aren’t failing at some point, you are not pushing yourself or attempting difficult or worthwhile things. So, learning to embrace failing is crucial in your growth as a person in all facets of life.

Meet Caitlin Redstone, an outstanding @csu_fshn Fermentation and Food Science Ram! 🍽️🐏

As a department ambassador and lab support assistant for FSHN 301, Caitlin loves sharing her passion for food science and helping fellow students succeed. Get to know Caitlin in this Q&A 👇

What does FSHN and your major mean to you?
FSHN means community. As an FSHN student, I am constantly surrounded by people who are invested in both my academic and personal growth and want to see me succeed. I also love that Food Science gives me the opportunity to share my love of food with others and show them the beauty and complexity of the science behind what we eat.

How have you gotten involved with FSHN and your major?
I have gotten involved with FSHN through the Food Structures and Functions Lab, where I have the opportunity to gain hands-on experience. I also provide lab support for FSHN 301 and serve as an ambassador for FFS, which has allowed me to connect with other students and become more involved in the FSHN community!

What communities or industries do you hope to positively impact after graduation?
I want to stay connected to food and the science behind it, along with the amazing people I have met throughout the way. I’d love to share my passion for food with others and help people see how interesting and important the behind what we eat really is A portrait of a person seated at a wooden table indoors near large grid-style windows. A glass of water sits on the table in the foreground. Cushions and seating are visible behind the person, and residential-style buildings can be seen through the windows outside.
