SPAGHETTI ALLA CHITARRA

Jamón Serrano • San Marzano • Pork Candy

@matt_moore704 said he wanted to do a fun spin on Amatriciana, and I said sweet let’s use Jamón Serrano. Then he said he wanted to hand cut the noodles with a chitarra, and I said have at it big dawg. So he did. Then he said he wanted to process fresh San Marzano tomatoes for the sauce, and I said ok, I like you but you’re crazy, and so he did. Added some of our sofrito to help fortify the sauce and here we have our take on amatriciana. Garnished with pork candy breadcrumbs, and of course chives.

Simple. Delicious. Not easy. taken in Customshop by @customshopclt

Behind every unforgettable bite, smooth service, and spotless station is a team that puts in the sweat long before the doors even open.

Today is National Food Service Worker Day, but around here, the respect is everyday. We’re honored to join @givingkitchen in their initiative to support food service workers across the nation with emergency financial assistance, mental health, and community resources.

To our crew, and to everyone holding down line, dish, bar, and floor across the industry, thank you for making the hospitality world go round.

Behind the line with @matt_moore704: our CDC, resident 🐐, and recent @ncrlachefshowdown competitor. Selected alongside the state’s top culinary talent reflects the passion Matt brings to our kitchen.

He’ll tell you to get the Berkshire pork chop without hesitation, because it’s “comforting, smoky, tender, intentional.”

This chop showcases how our team cooks: “sourcing exceptional ingredients, treating them with respect, and letting the quality speak for itself,” says Matt.
