Nearly 27 years ago to the day I was afforded my first (and only) snow day. As I predate web cams and working from home was not yet fashionable I had settled in to what I assumed would be a weeks long closure UNTIL our then bad boy mayor did what nooooooobody asked for and called in the Canadian military to do some shovelling. Damn if I wasn’t back in class 24hrs later. It’s cool though my kids are getting their education from the stack of Hunt a Killer games Santa brought….and YouTube shorts. taken in Darlings by @darlings.pec

We do our best here to keep things extremely simple, most of you LOVE us for this, some of you not so much. If you find yourself in the latter position I would probably skip this one. Your looking at a fresh tomato risotto, the rice cooked in tomato water until toothsome (that’s crunchy for you literal types) and finished with spoonfuls of the seasons freshest milled tomato and garlic. I feel like us Chefs have collectively jumped the shark with the squash blossoms. Hell I put a damn scallop mouse inside last year, served it with shrimp mayo…what a nerd ! Anyway, simple IS best. So this year they are flattened in crumbs, with a salty brown anchovy inside, greasy, salty and crispy. Little squeeze of lemon and a pot of that MILLENNIAL KETCHUP. Haven’t been able to successfully make pizza dough out of cauliflower or whatever but darn it if sometimes we don’t make a nice one for our gluten free friends. This here is a warming plate of RISO fortified with saffron tea and spicy Nduja. A little basil and pistachio pesto rounds it out.
