Some people burn a little bit brighter than everyone else. Franco Prevedello is sadly no longer with us, he passed away on October 4. It is hard to describe working at his restaurant Centro in the early 90’s ( think Bourdain + ) , but the primary memory I have of Franco was his passion to have a great restaurant and the lengths he would go to make it that way. When he wasn’t being that guy, he was genuinely interesting person who connected me to our shared Veneto /Venetian history, introduced me to Carlo Scarpa and taught me some cool proverbs. Condolences to Barbara, Kate, Barb. by @dc__soma

Guts of a new machine : the insides of our new Buhler Zonda roaster - which is replacing our older ( 1938!) Scirocco roaster. It is pretty state of the art. 😵‍💫 can't wait to take it for a spin! by @dc__soma

A long time ago Brian Richer(@castordesign )told me that he was opening a restaurant and that we just hired @mattymatheson do you know him? I didn’t but 2 Soma staff parties at oddfellows and i figured him out - supercrazy chef with chops -“the roast piglet was just lying on its side like a burnt figure from Pompei “ the food (taconight and more ) was just delicious and then He became a superstar despite his shy personality .
