Creamy dill & pickle potato salad 🥔🥒🌿

Tangy, creamy, herby and VERY easy.

You’ll need:
• 700g potatoes, peeled & chopped
• 4 boiled eggs, roughly chopped
• 4–5 pickles, finely chopped
• 3 tbsp @jagomayonnaise_ng
• 1 tbsp Dijon mustard
• 2 tbsp pickle juice
• Big handful fresh dill, chopped
• Salt & black pepper
• Spring onions

Boil the potatoes in well-salted water until fork tender, then drain and let them steam dry for a few minutes. Let it cool to room temperature.

Mix Jago Mayo, Dijon, pickle juice, dill, salt and plenty of black pepper. Add the cool potatoes, pickles and boiled eggs, then gently toss everything together.

Taste for salt and finish with more dill and spring onions.
