💥Sake alert💥:
Kizan | Yoigokochi (Nagano) — tastes like pear and apple pie decided to become a beverage. Dangerously easy to drink. Do NOT treat like juice.

Katori 90 Namagenshu (Terada Honke, Chiba, brewing since ~1675), these guys said “no thanks” to modern yeast, machinery, and basically the 20th century. The result: undiluted, unpasteurised, rice-bran-forward chaos in a bottle. Not for the faint of heart. We love it.

⚓️💜12 years ago Tres Hombres first sailed into our lives, and every single time they come back to town it still feels special.💜⚓️

There’s something we deeply admire about what they do; choosing the hard way, the slow way, the way that actually respects the sea instead of just using it. No engines, no shortcuts. Just wind, rope, and a crew who works harder with their hands in a week than most of us do in a month.

We’re proud to pour the wine they sail over from our incredible producers, to tell their story, and welcomed them home again and again. Every visit is a reminder of why we do what we do, that there are still people out there sailing for something bigger than themselves. To every crew member who has ever stepped off that ship and into our bar: thank you. For the work. For the salt in your veins. For reminding us what real commitment to this planet looks like.

Some visits just stay with you. During our California trip we had the privilege of sitting down for lunch with Shaunt Oungoulian & Diego Roig : the duo behind @lesluneswine and honestly? It was one of those colorful afternoons! 🌈. UC Davis-trained, French natural wine apprenticed (think Fleurie, think Mâcon), and completely farm-obsessed; working their own vines, and a deep belief that great wine starts in the soil. 🐣❤️ Spring is slowly(!) arriving in Copenhagen and we’re prepared. News in the house are: Two unique cuvées by Karl Schnabel by the glass this week. One super floral and fruit driven Sauvignon Blanc and one rich and juicy Austrian red-blend. Try them both in a half/half flight or just enjoy a full glass of the red paired our chlorophyll-packed parsley gnocchi served with the first ramson of the year. Les Bottes Rouges! 💥
Meet Jean-Baptiste Menigoz & Florien Kleine Snuverink — the duo behind Les Bottes Rouges.
Jean-Baptiste didn’t grow up in wine. He spent a decade as a teacher in Arbois, making wine on the side purely out of obsession. It wasn’t until an apprenticeship with Jura legend Stéphane Tissot that he finally traded the classroom for the vines for good. The name? Taken from a song by French punk band Les Wampas. That tells you everything.
In 2014 he was joined by Florien, originally from the Netherlands, who left behind her cult Amsterdam wine bar Café Schiller to move to the Jura and learn winemaking from scratch — eventually becoming his partner at the estate.
Today they farm around 10 hectares of Chardonnay, Savagnin, Trousseau, Poulsard and Pinot Noir on limestone, clay and marl soils. Certified organic, low intervention, native yeasts, minimal sulphur.
