Korean Party Ribs 

I cut up a rack of St. Louis ribs and I was surprised at how tender and flavorful they were, even with very few ingredients. You'll want to save this one and try it for yourself. Check out the simple process below! 

Ingredients:
• 1 Rack St. Louis Ribs
• 1 Bottle Of Bibigio Korean BBQ Sauce
• 1 Can Of Sapporo Beer
• Lillies Q Q-Rub
• 3 Tablespoons Unsalted Butter
• Green Onions
• Sesame Seeds
Directions:
1. Remove membrane from back ribs then slice into individual ribs. Drop into a @cambromfg 4 quart then pour in half the @bibigiofficial sauce and half the @sapporobeerusa beer. Mix well then cover and refrigerate 12-24 hours. 
2. Preheat the @traegergrills to 250 for 15 minutes with the lid closed. Remove ribs from marinade and pat dry with a paper towel. Season with @lilliesq Q-Rub then place them directly on the grill bone side down. Close the lid and leave undisturbed for 2 hours. 
3. Place the ribs into a High Heat H Pan then pour in the remaining sauce and beer. Add butter then cover and return to the heat. 
4. Allow to cook 2 hours then remove the lid and allow to cook another 30-60 minutes until the sauce starts to set. Remove from heat, cover and place in a @chefstemp Final Rest BBQ Blanket. Allow to rest at least 30 minutes.
5. When done resting, build your plate. Start with a base of white rice then lay the ribs on top. Sprinkle with green onions and sesame seeds. Serve with a side of korean pickled cucumbers.

Reverse Marinated Chicken Thighs 

Ever tried a reverse marinade? Cook your protein like normal then dunk it in sauce before you let it rest. Its a good way to eliminate burning when you have sauces with a high sugar content. Check out the super simple, 3 ingredient dish below! 

Ingredients:
• Boneless Skinless Chicken Thighs
• DD Honey BBQ Rub
• DD Honey BBQ Sauce 

Directions:
1. Season chicken with Honey BBQ Rub then let rest uncovered for 40 minutes. 
2. Preheat the @webergrills to 375 for 15 minutes with the lid closed. Add chicken and cook undisturbed for 5 minutes. Flip and allow to reach over 165 on your @deissofficial digital meat themometer. 
3. Pull from the heat and immediately coat in sauce. Place back on platter and cover loosely with aluminum foil. Allow to rest at least 10 minutes before serving.

Chicken Tacos

Happy #TacoTuesday! I had to find a good use for my Triple Pepper Sauce and what better way than on some fully loaded tacos?!?! I started with a flour tortilla then dropped on some diced chicken thighs. It was followed by pinto beans, mexican rice, and a little coleslaw mix. It recieved some fresh avacado then some queso fresco. It got a heavy drizzle of Triple Pepper Green Sauce then a squeeze of fresh lime juice. All topped of with a little fresh cilantro.

Triple Pepper Green Sauce 

It was time to turn the seasoning into a sauce! My all time favorite DD rub is the Triple Pepper and I wanted to try out a liquid version that I could put on anything.  With cooler weather right around the corner it was time to make a little something to warm you up from the inside out! This spicy sauce will give anything you throw it on a tasty, spicy boost! Check out the full recipe below! 

Ingredients
• 2 Poblano Peppers
• 2 Jalapeños
• 4  Habaneros
• 1 Orange Bell Pepper
•4 Roma Tomatoes
•½ White Onion
•4 Cloves Garlic
1 Medium Carrot
•½ Cup Chicken Broth
• Juice From 1 Lime
•1 Tablespoon White Vinegar
•1 Teaspoon Salt
•½ Teaspoon Cumin
•½ Teaspoon Mexican Oregano
•½ Teaspoon Chicken Bouillon
•1/2 Cup Cilantro
• 1/4 Cup Neutral Oil

Directions:
1. Preheat the @traegergrills to high for 15 minutes with the lid closed. Halve the peppers then remove the stems and seeds on. Halve the tomatoes. Peel the onion and remove the ends then quarter it. Peel the garlic then lay the veggies on a well oiled rack. Place the rack on the smoker for 20-30 minutes until charred and blistered. Remove from heat and allow to cool slightly.
2. While the veggies roast, prep the carrot. Peel the carrot with a @deissofficial peeler, then cut it into small chunks. Place a small pan on a @gasland.us electric induction burner. Add in carrot and chicken broth. Bring to a boil then drop to a simmer. Continue to simmer until the carrot is fork tender. Remove from heat and allow to cool slightly.
3. Add smoked veggies, carrots and cooking liquid, lime juice, vinegar, salt, cumin, oregano, bullion and cilantro to a @blendtec Wildside Jar. Blend until smooth. With the motor running, slowly drizzle in the oil until the sauce turns creamy and silky. 
4. Pour sauce into a small pot and simmer on low heat, stirring occasionally for 10 minutes. Remove from heat and allow to cool before bottling.

Chicken Wings 

Crispy, crunchy, smoky and delicious! These wings are the perfect game day snack with minimal prep and tasty results. Check out the simple process below! 

Ingredients:
• 2 lbs. Chicken Wings
• 2 Tablespoons Cornstarch
• 1/4 Cup DD California Blend
• 2 Tablespoons Olive Oil
• 1/2 Cup DD BBQ Sauce
• 1/4 Cup Homestyle Ranch 

Directions:
1. Drop the wings into a @cambromfg H Pan. Add in cornstarch, DD California Blend and olive oil. Toss until well mixed then cover and refrigerate.
2. When ready to cook, preheat the @traegergrills to High for 15min with the lid closed. Place wings on the grill directly from refrigerator and leave undisturbed for 25 minutes. 
3. Start checking the internal temperature using a @deissofficial meat themometer. When the wings hit 190 internal, pull them using @bbqaidtools tongs and place them in a @whysko_us mixing bowl. Loosely cover with foil and allow to rest for 10 minutes.
4. Cover with DD BBQ Sauce then toss until well coated. Spread on a platter and serve with a side of @litehousefoods ranch.

Poutine 

Sometimes you need some comfort food. For this bowl, I started with some air fried waffle fries then tossed them in @lawrysseasoning salt. I topped them with @ellsworthcreamery cheddar cheese curds then poured on a heavy dose of  Milarge à Sauce Poutine Gravy. Bon appetite!

Peruvian Chicken With Aji Verde 

This may be the only dish I have ever made on back to back nights. Yeah, it was that good. This peruvian style chicken was packed with flavor and the Aji Verde gives a great kick of heat that really sets this dish apart. Check out the simple process below and let me know what you think! 

Ingredients:
For The Chicken:
• 2 Pounds Boneless Skinless Chicken Thighs
• 5 Cloves Garlic Peeled
• 1/3 Cup Soy Sauce
•  Juice From 1 Lime
• 1 Tablespoon Garlic Olive Oil
• 2 Teaspoons Ground Cumin
• 1 Teaspoon Smoked Paprika
• 1 Teaspoon Dried Oregano 
• 1/2 Teaspoon Black Pepper
For The Aji Verde
• 3 Large Jalapeños
• 2 Habaneros
• 1 Cup Cilantro
• 2 Green Onions Whites Removed
• 2 Cloves Garlic Peeled
• 1/2 Cup Mayonaise 
• 1/4 Cup Greek Yogurt
• Juice From 1/2 Of A Lime
• 1 Teaspoon Salt
• 1/2 Teaspoon Black Pepper
• 2 Tablespoons Garlic Olive Oil
Optional Toppings
• Jalapeños, Green Onions, Cilantro, Lime 

Directions:
1. Marinade the chicken: Add garlic, soy sauce,  lime juice, olive oil, cumin, paprika, oregano and black pepper in a @blendtec . Blend until smooth then pour into a @cambromfg 2qt container. Add the chicken thighs and turn to coat. Cover and refrigerate 6-8 hours.
2. Make the Aji Verde: Add jalapeños, habaneros, cilantro, green onion, garlic, mayonaise, greek yogurt, lime juice, salt and pepper to a blender. Process until smooth then with the motor running, slowly pour olive oil in. Refrigerate at least 30 minutes. 
3. Grill the chicken: Preheat your @traegergrills to High for 15 minutes with the lid closed. Place chicken on and leave undisturbed for 5-6 minutes then flip. Once it reaches 165 internal, pull to a plate and place in a @chefstemp Final Rest Blanket or 10 minutes. 
4. Plate it: Place chicken on a serving platter. Drizzle with Aji Verde then sprinkle with jalapeños, green onions, cilantro, and lime juice. Serve immediately with extra sauce on the side.

Chicken Bacon Ranch 

This loaded Chicken Bacon Ranch Sandwich was piled high with Honey BBQ chicken, bacon, ranch, avocado, melted cheese, tomato, and lettuce. All served up on a toasted brioche bun. Check out the full recipe below! 

Ingredients:
• Boneless Skinless Chicken Breasts
• Olive Oil
• DD Honey BBQ Seasoning 
• Thick Sliced Bacon
• Provolone Cheese
• Buns
• @litehousefoods Jalapeño Ranch
• Iceberg Lettuce
• Tomato
• Avacado 
• Brioche Buns

Directions:
1. Halve the chicken breasts then toss with olive oil. Season with DD Honey BBQ then wrap and refrigerate overnight. 
2. Preheat @traegergrills to 350 with the lid closed for 15 minutes. While the grill preheats, lay out the bacon on a wire rack. Season with DD Honey BBQ then place on the smoker. Allow to cook until your desired crispiness. Pull and set aside.
3. Place chicken on smoker directly from refrigerator. When it reaches 155 internal, top with cheese. Allow to cook until 165 then pull with @bbqaidtools spatula and allow to rest. 
4. Build your burger: On a toasted bun add ranch then chopped lettuce. Add tomato then chicken. Top with bacon, avacado and more ranch. Add top bun. Serve with your favorite potato. Slice with a @shuncutlery and serve!

Tri Tip 

Don't skip one of the most important steps in BBQ. The rest. It allows those juices to redistribute and allows the muscle fibers to relax, resulting in a much more tender and tastier final product. The @chefstemp Final Rest Blanket is the perfect environment for your meat to take a little snooze before hitting the cutting board. Check out the full process on this simple tri-tip! 

Ingredients:
• 1 Tri-Tip
• Golden Steer Sergio's Seasoning 
• Golden Steer Pepper Mafia
• 4 Tablespoons Beef Tallow 

Directions:
1. Season tri-tip with @goldensteer Sergio's Seasoning and Pepper Mafia. Leave on the counter for 45 minutes then prepare the grill.
2. Preheat the @webergrills to 350 for 15 minutes with the lid closed. Place meat in the center of the grill and leave undisturbed. After 10 minutes flip it. Allow to cook until it reaches 130 internal then pull with @bbqaidtools tongs.
3. Spread half the tallow on a piece of butcher paper then add the meat on top. Add the rest of the tallow to the top of the meat then wrap tightly. Place inside a Chefs Temp Final Rest Blanket and allow to rest a minimum of 20 minutes.
4. Remove from paper and place on a @bandito_boards . Slice against the grain with a @kumaknives then drizzle with juices from the butcher paper. Serve immediately.

Carne Asada Crunchwrap Supreme 

Does this count as #tacotuesday? I took some of the carne asada from a previous cook and threw it into these delicious crunchwrap supremes. Your gonna want to save this one, check out the full details below! 

Ingredients:
• 2 Jumbo Tortillas
• Carne Asada Sliced Thin
• Nacho Cheese
• 1 Tostada Shell
• Shredded Lettuce
• @tacobell Mild Sauce
• @losaltos_foods Crema Mexicana
• Shredded Cheese 

Directions:
1. Leave 1 jumbo tortilla whole. Cut the other one the same size as the tostada shell then set aside.
2. Place the jumbo tortilla on the cutting board and place the carne asada and nacho cheese in the middle.
3. Place the tostada shell on top then add lettuce, mild sauce and crema. Top with shredded cheese.
4. Place the cut tortilla on top then carefully fold up all the edges. Place on a medium heat griddle fold side down. Press down and let cook until golden brown. Flip and brown the other side. Remove from heat and serve immediately.

Braided Chicken Breast 

I might have to start braiding more things around here. This braided chicken breast was the star of the dinner table tonight and was the perfect meal for 1. The braid definitely added more surface area for seasoning and the nooks and crannies held the juices and sauces in place instead of letting them run out onto the grill. I recommend trying it out but meanwhile, check out the simple process below! 

Ingredients:
• Boneless Skinless Chicken Breast
• Garlic Olive Oil
• DD The Asian Blend
• Bachan's Japanese BBQ Sauce 

Directions:
1. With a sharp @shuncutlery butterfly the chicken breast. Open up and lay flat then cover with a piece of plastic wrap. Using a @lightyear_kitchen Meat Hammer, pound out the breast until it is an even thickness throughout. 
2. Turn the chicken so the length of meat is going away from you. Make 2 cuts about an inch from the top of the chicken all the way down to the bottom, creating 3 cutlets that are still attached on the top to eachother. Braid the chicken then secure the bottom with a toothpick. Brush with olive oil then sprinkle with DD The Asian Blend. Wrap and refrigerate at least 45 minutes, overnight is best.
3. Remove meat from refrigerator and preheat the grill. Heat your @webergrills to 350 for 15 minutes with the lid closed. Place meat in the middle then close the lid and leave undisturbed for 10 minutes. Flip the chicken and generously baste with @trybachans . Allow to keep cooking until it reaches 165 internal. Remove from the heat and brush with another coat of Bachans. Loosely tent with foil then allow to rest at least 10 minutes before serving.

Honey Bourbon Pork 

It was finally time to put the @chefstemp Pro Temp S1 to work! This dish is a childhood favorite of mine, but don't make my same mistake. RESERVE THE MARINADE (sorry mom) !! It becomes a delicious gravy that really pulls the plate together. Served over mashed potatoes, this dish can be elegant and delicious at the same time! Save this one and check out the full process below! 

Ingredients:
For The Marinade:
• 1/4 Cup @kikkomanusa Soy Sauce
• 1/4 Cup Honey
• 1/2 Medium Yellow Onion Diced
• 1/2 Cup Lemon Juice
• 1/2 Cup @jackdaniels_us Tennessee Honey
• 1 Tablespoon Minced Ginger
• 2 Tablespoons Olive Oil
• 4 Cloves Garlic Minced
• 1 Package @swift__meats Pork Tenderloins
For The Gravy:
• Reserved Marinade
• 1 1/4 Cup Water
• 3 Tablespoons All Purpose Flour 
For serving:
• Mashed Potatoes
• Parsley

Directions:
1. In a @cambromfg H Pan, whisk all ingredients for the marinade, except the pork. Add in pork. Turn to coat then cover and refrigerate at least 30 minutes (overnight is best), turning once halfway through. 
2. Remove the meat from the marinade. SAVE THE MARINADE! Lay pork on a wirerack and pat dry. Season with @goldensteer Sergio's Seasonng and Pepper Mafia. 
3. Set up your @webergrills kettle. Place @thegoodcharcoal into a chimney and light. Allow to turn grey the split your coals. Dump half on one side and half on the other to create an indirect zone in the middle. Place the lid on and allow to heat up to 350. Monitor your temps using a Chefs Temp Pro Temp S1 digital gauge for precise temperature control!
4. Place the pork directly in the middle. Insert your probe then cover. Flip halfway through. 
5. When the pork hits 140, pull with @bbqaidtools tongs and loosely tent with foil. 
6. While the meat rests, make the gravy. Pour the reserved marinade into a sauce pot on the stove then add water and flour. Whisk well. Bring to a boil then drop to a simmer for 20 minutes, stirring frequently.
7. Slice pork on a @bandito_boards using a sharp @kumaknives then assemble with mashed potatoes on bottom followed by pork, gravy, parsley.
