Beer Can Chicken

If you want a really juicy bird, there's no better way than brinning it. This whole young chicken spent 12 hours in a brine consisting of salt, brown sugar, and DD All Purpose Rub. It was rinsed thoroughly the seasoned heavily with DD All Purpose, then it was wrapped and refrigerated for 6 hours, then the @traegergrills was preheated to 225. I used a beer can chicken stand and filled it then stuffed my bird on top. It smoked for a couple of hours until it hit over 170 on my @thermopro. Then, it was pulled to rest before being broken down. Stay tuned to see what we turn this into next!

Tonight’s dinner was a special one. Cooking this incredible A5 Wagyu New York strip on a hot griddle over ripping charcoal. The smell, the sound, the taste - it’s an experience in itself. So happy with how this turned out. If you haven’t cooked a steak this way, you’re missing out! Treat yourself every now and then, you deserve it! Watch until the end to see our sweet pup’s being introduced to Wagyu beef! ❤️

What’s Mark Cooking…All About Dips

Traeger Game Day Week 2 is in full swing.

This Smoked Barbacoa Dip was a labor of love and so so good.

This isn’t @bigogrub Elote Dip but it’s a good one.

I wanted something that could be eaten on its own and used as a topping. Combine them both and you got yourself a meal on its own.

If you want meaty, cheesy, and full of flavor. I got you.

On to the next meal!

Let’s Go!!!

Not your average steak night… 🥩

Drenched in our butter & seasoned the Golden Steer way. Wine optional. Flavor? Mandatory.

Firecracker Pork

This is, by far, our favorite pasta dish. This Firecracker Pork has the perfect balance of sweet and spicy. It combines flavors not normally found in a pasta dish and is absolutely incredible to taste. I started with a whole pork roast and cut some slits in the small fat cap. It got a heavy dose of DD California Blend, then was wrapped and refrigerated for 24 hours. It went on the @traegergrills at 225 undisturbed for 2 hours. Then, it got a spritz of 50/50 vinegar and apple juice every 45 minutes. Once a nice bark formed, it was pulled and cut into chunks and went into my @instantpotofficial with a braising sauce. It slow cooked a couple of hours until it was shreddable by hand. The meat was removed and shredded, then set aside. The braising liquid was brought to a boil and then allowed to simmer 20 minutes to reduce. Meanwhile, I cooked my noodles al dente, then finished them by tossing them in the cooking liquid. I assembled my dish with noodles, shredded pork, a dallop of sour cream, and a homeade hananero pesto.
