From the reef to your plate: I spent days following the Caribbean spiny lobster in Corn Island, Nicaragua. Here’s what I learned 🦞👇

1️⃣ No claws. This is the Caribbean spiny lobster (Panulirus argus), not Maine lobster. Almost all the meat is in the tail.

2️⃣ A Corn Island lobster may not have been born here. Its larvae drift 5–9 months in the open ocean between populations. No country can manage this species alone.

3️⃣ Traps, not divers. A trap brings the lobster up alive, so it can be measured, and undersized or egg-bearing females go back to the sea.

4️⃣ The plant buys from both artisanal and industrial boats, so the income spreads across the coast. Every lobster passes the same rule: a tail at least 140 mm long.

5️⃣ By hand, on ice: the team removes the intestinal tract and cleans each tail. Slow, precise work. I was impressed almost all work at the plants is manual, to ensure quality.

6️⃣ Second product: whole lobster, individually wrapped and frozen. Mainly exported to France, Spain and China; exported at -35 degrees and shelf life of 36 months.

7️⃣ Traceability you can read: species, origin, catch method, FAO fishing area 31, and a lot number that links each box back to the boat and date of catch.

8️⃣ March 1 to June 30: no fishing. Nicaragua shares this closed season with 8 other countries. If the larvae cross borders, the rules have to cross them too.

9️⃣ From the plant to any of the 15 countries it gets exported to, without breaking the cold chain. One failure undoes everything before it.

🔟 As a coffee producer, I recognize the pattern: traceability, a resource you manage beyond your own farm, and a value chain that works best when many people take part.

Next time you order lobster, ask: traps or divers? In season or during the closed season? Can you trace it back to the boat?

We just spent an amazing two days with two of the most renowned coffee producers in the world: @diego.baraona of @lospirineoscoffee, El Salvador and @dirobelo of @aquiarescoffee in Costa Rica, as well as @bram_dehoog who brought them together as business partners in @paso_paso_coffee, a Farmer Owned coffee roastery in Hannover, Germany.

They shared previews of their upcoming microlots with an enthusiastic crowd, told their incredible stories and answered any and all questions around the coffee industry at large, down to exact fermentation protocols and varietal research.

Moments like these don’t happen a lot and we’re proud and grateful that they happen at our little shop.

And last, but definitely not least, many thanks to @anna.katharinaa for capturing these evenings so beautifully.

A little recap from our week at World of Coffee in Brussels! We kicked things off by brewing Hacienda Misiones’ Sudan Rume natural at the Varia Brewing stand alongside our friends at Beanbros, before moving on to the award ceremony for Europe’s 100 Best Coffee Shops. 

On Friday we collaborated with Bleu, a beautiful eatery and specialty coffee spot, serving our banana bread cold brew and espresso coconut foam, alongside some epic filter coffees. 

Saturday was spent at the Acaia stand serving hand brews of Wilton Benitez’ advanced natural Tabi, before rounding things out at Mazzer using their full range of incredible grinders.

Finally, back in Amsterdam we wrapped the whole thing out at Uncommon Bar, hosting Diego Robelo of Aquiares Estate for an insightful session on regenerative agriculture and the future of specialty coffee production.
