STEAK SATURDAY

You know how we do love a steak at the weekend. So when I was kindly sent a gorgeous cotê de beouf from @organicbutchery I knew that’s exactly what we were going to have.
Always with roasties and a salad. Tonight’s salad was a little different, it was a warm caprese salad. This can be had a a side dish or even as a delicious dip with crusty bread. So here goes!

SERVES 2
🥩cotê de beouf @organicbutchery
First the beef was brought up to room temperature. Seasoned with plenty of salt and black pepper.
Then pan fried on a high heat, basting with butter and adding a shallot, garlic and rosemary to the pan for extra flavour.
Cook for 3-4 mins each side until a nice crust forms
🥩next place the steak into a roasting dish and cook in a 180° for 8-10 mins. This is for medium. Once this cooking time is up cover with foil and leave the meat to rest for 10-15 mins
Then carve the meat into slices

WARM CAPRESE SALAD
🍅in a roasting dish add
300/400g mixed tomatoes
8 cloves of garlic
Drizzle with EVOO
Season with salt and black pepper
Into the oven for 20-30 mins each side
🍅once the tomatoes are soft gently squash them and then add
1 buffalo mozzarella
Torn into pieces and placed in and around the tomatoes
The cheese will melt with the residual heat
Top with some fresh basil and a drizzle of EVOO and enjoy 😉

ROAST BEEF

Today’s Sunday roast was one of my favourites, a delicious rib of beef with all the trimmings. Homemade red wine gravy that you could drink on its own.
A smaller crowd this Sunday but all the important people round the table 🥰
Happy Sunday, what are you having today?

HOTSTONE LONDON

We were kindly invited down to @hotstonelondon to experience their amazing menu, and what a fantastic dining experience it was!

We started our meal with a welcome glass of champagne and a delicious, freshly shucked oyster each.

Next came the hot stone experience – a beautifully presented selection of Wagyu steak, salmon, prawns, scallops and a variety of vegetables, served alongside steamed rice and miso soup.

Everything was incredibly fresh and delicious. The hot stone stays hot for around seven minutes, and halfway through cooking we were brought a fresh one so we could continue cooking everything to perfection.

We were also offered a choice of wine or sake. Our lovely waiter recommended the sake as the perfect accompaniment to the steak, and it certainly didn’t disappoint!

We were then treated to a beautiful omakase box filled with fresh sushi and sashimi, accompanied by delicious lychee martinis.

Just when we thought we couldn’t fit in any more, our waiter kindly invited us to choose some additional hot dishes from the menu. We opted for soft-shell crab tempura, chicken karaage and rock shrimp tempura – all absolutely delicious!

We also enjoyed a bottle of wine from their extensive wine list before rounding off the evening with a lovely panna cotta.

From the quality and freshness of the ingredients to the attentive service and the unique hot stone dining experience, everything was fantastic.

A huge thank you to @hotstonelondon for such a wonderful lunch. We thoroughly enjoyed every moment! 🥂🍣

FILEJA CON NDUJA

I’ve been waiting to recreate this dish ever since I got back from Tropea. I had brought back some nduja and sweet Tropea onions.
The pasta shape Fileja is commonly used for this dish. I could only get one with pepperoncino, but this dish is spicy so it just added to the flavours. You can use rigatoni or a similar shaped pasta.
There are very few ingredients, but the flavours are intense.
Typically you would finish the dish with a grating of pecorino cheese. I only had Parmesan and this still worked perfectly. So here goes!

SERVES 4
🌶️in some salted boiling water cook
500g fileja pasta (or alternative)
🌶️next
Drizzle some EVOO into a frying pan
Add
1 medium red onion (tropea if you can get) not too finely chopped
Once translucent
🌶️Add 150g nduja
Let this melt into the pan
🌶️finally add
1 tin of plum tomatoes and break up in the pan
Season with a touch of salt and plenty of black pepper. Let this bubble for a few minutes
🌶️once the pasta is nearly cooked add to the sauce. Loosen with a ladle or two of the pasta water. Let this combine for a few minutes so the pasta absorbs the sauce.

To serve add to bowls, drizzle with a touch more EVOO and a good grating of either Parmesan or pecorino. Enjoy 😉

JAPANESE 7 SPICE SALMON

I was kindly sent some Japanese 7 spice from @spicemasters.co.uk
It’s a lovely blend of spices that compliments any kind of fish, meat or veggies.
It has a kick from cayenne and chilli with zesty lemon and orange peel. I marinated the salmon first with a sweet marinade and the spices really went well with it.
I also made some Japanese style green beans. So here goes!

Serves 4
🥢marinate your salmon fillets
Flesh side down for an hour minimum but no more than 2 hours in
3 tbsp light soy sauce
2 tbsp grated ginger
2 tbsp mirin
1 tbsp honey
🥢you can either grill or pan fry skin side first, then flip and finish cooking, brush on the rest of the marinade

SESAME GREEN BEANS
🥢in a frying pan drizzle a little neutral oil
Add 4 cloves of minced garlic
Warm through and then add
1-2 packs of fine green beans
Stir fry
Add
2-3 tbsp sesame seeds
1 tbsp light soy sauce
Then dress the beans with sesame oil before serving.

I served this with rice, some sliced spring onions and sprinkled the salmon fillets with the Japanese 7 spice.
Enjoy 😉

SUNDAY ROAST

Today’s roast was for 11. I had a leg of lamb in the freezer, and decided to have a whole chicken also with stuffing.
Roast potatoes, roasted carrots, broccoli and green beans. Not forgetting Yorkshire puddings and homemade gravy.
Everyone was happy and full.
Dessert was trifle and a lemon roulade.
Happy Sunday. What was your roast today?

ESTEPONA 🇪🇸
I’ve just had a lovely week away in Estepona visiting my parents.
My daughter came with me and surprised her grandparents.
Such a lovely week away, the weather turned out to be warmer as the week went on and even got to spend some time on the beach.
We ate some of the usual Spanish food and even tried a new restaurant in estepona town that offered small sharing plates @wildestepona it was a relaxed vibe and had some amazing natural wines, we tired the rosè and it was delicious.
That’s the last bit of summer sunshine I’ll see for a while.

TOMAHAWK STEAK NIGHT

Nothing better than a steak night.
I used the reverse sear method for this gorgeous tomahawk. After cooking on low in the oven I then seared it in a hot pan and basted it with butter that was infused with rosemary, shallot and garlic. After resting it was juicy and tender. Cooked to medium just how we like it.
Served with roasties and a rocket, tomato and onion salad. Topped with a dusting of Parmesan and dressed with EVOO and balsamic vinegar 👌🏼
Happy weekend 😉

TURKEY MILANESE

I love to use turkey steaks instead of chicken to make Milanese.
This version I tried something new, i normally flour, egg then breadcrumb.
Tonight I missed out the flour, marinated the turkeys steaks in beaten egg, with garlic salt, smoked paprika and Italian mixed herbs.
I left this in the fridge for a couple of hours.
I made homemade breadcrumbs using some leftover sourdough. Drying it out in the oven then whizzing them up. I added the same garlic salt, smoked paprika and Italian mixed herbs.
Shaking off the excess egg mixture off the turkey steaks and then coating them in the seasoned bread crumbs.
I fried them in rapeseed oil and they turned out perfect. No need for anything other than a squeeze of lemon.
I served them with baked sweet potatoes and a tomato and mozzarella salad.
Enjoy 😉
