Meet the team...

Chay joins the bar part-time, bringing a calm, understated presence and a sharp eye for detail. Originally from Hong Kong and later Edinburgh, she carries a mix of influences that shows up in the way she works—measured, attentive, and quietly confident once she settles in.

She’s got a natural feel for the rhythm of the bar, picking things up quickly and finding her place without fuss. There’s a straightforwardness to her style: good habits, no shortcuts, and a focus on getting things right.

You might not hear her before you see her, but she’s finding her groove and settling in nicely behind the bar.

Starting with Michael.

Michael joined nearing the end of last year from a certain hotel in St. Andrews, looking to further progress his cocktail knowledge and craft on the bar he has been doing just that as of late.

Loves a whisky, hates an aviation. But as he says, he will drink anything if its given to him.
