POSTS STORIES REELS TAGGED
On Saturday, June 13th, we hosted the fourteenth and final dinner in our Guest Chef Series: The James Beard Honorary Dinner. The timing could not have been better, with the James Beard Awards in town that same weekend. It was a bittersweet night, marking the close of a series that has taught our team an enormous amount over the past fourteen dinners.

We owe our deepest thanks to our headlining chefs: Trevor Teich, Freddy Money, Carolyn Nugent, Alen Ramos, and David Breeden. Their talent and dedication to cuisine made the menu unforgettable. We were also lucky to have mixologist Ryan Castelaz absolutely crush the non-alcoholic pairings, with caviar and countless accoutrements for the NA beverage program generously provided by Rodrick Markus of Rare Tea Cellar.

We were honored to have two Charlie Trotter’s alumni leading the front of house: Master Sommelier Serafin Alvarado and Jason Platt, Leader of the Excellence Program. Serafin’s wine pairings were impeccable, and Jason’s hospitality was as smooth and gracious as ever. Beyond their work on the floor, the two shared wonderful stories from the old days at Charlie Trotter’s, bringing the restaurant’s enduring philosophies of excellence, generosity, and relentless attention to detail to life for everyone in the room.

The evening was made even more meaningful by the presence of the James Beard Foundation. Janae Butler from the JBF worked the dinner right alongside us, and CEO Clare Reichenbach even stopped by to show her support. With help from our friends at OpenTable, we were proud to raise $10,000 for the James Beard Foundation.

As the final chapter of our Guest Chef Series, this dinner was a celebration of everyone who made the journey with us. To our regular guests, team members and friends who came back again and again to help us pull off these nights, we are endlessly grateful. We could not have done it without you. Thank you to Nick Robins for capturing the magic in photographs and thank you to my two restaurant moms: Sam Occhino and Toni Robertson who made long journeys to work these dinners. ❤️ big thank you to Vlad, Fyfe & Aziza. On June 13, Alen and I had the extraordinary honor of joining three incredibly talented chefs as guest chefs at Charlie Trotter’s, one of the most influential restaurants in American culinary history.

Returning to Chicago felt like a homecoming. It was especially poignant to be welcomed by Dylan Trotter and his remarkable team, many of whom were part of Chef Trotter’s original service staff and traveled from across the country to once again welcome guests into this legendary dining room.

Reconnecting with former colleagues & working alongside others for the first time, while practicing hospitality at its highest level is what we live for. To serve guests from the same kitchen where so many of the world’s great Chefs have worked, staged, and learned was one of the most meaningful experiences of our careers.

We are deeply grateful to Dylan for the opportunity to help continue his father’s legacy, and we are excited to see the future of Charlie Trotter’s under his leadership as he guides the next generation of hospitality professionals.

A special thank you to Valrhona USA for providing the Valrhona chocolate, Norohy vanilla beans, and Adamance fruit purées that helped make our menu possible.

Thank you to the especially talented Nick Robins for capturing these special moments 📸

And finally, thank you to Chefs David Breeden, Freddy Money, and Trevor Teich, along with their incredible teams, for making this an unforgettable evening. ❤️ by @dyltrot

It’s here. A little peek into our visit to @chefcharlietrotter Guest Chef Series “James Beard Honorary Dinner” It was a fabulous night of creative cuisine carefully crafted. We enjoyed sampling all the dishes, paired with non-alcoholic drinks, beautifully matching, making for a special experience. Here’s a glimpse with loads of others on the way, served in that famous Charlie Trotter space now hosted by his talented son, @dyltrot
We so enjoyed meeting friends old and new to celebrate in this special event in such a meaningful space. We enjoyed meeting a number of wonderful Chef creators like @fmoneychef of @atlasbuckhead - who dazzled us with his flavor layered dishes. His “Roots Run Deep” Beet Gazpacho, Beet Meringue, Beet Tartare, Smoked Goat Cheese, Asparagus & Peas was both dainty and delightful. We had a wonderful evening and wanted to thank everyone for making us feel at home and in a celebratory mood amid the echos of those following Charlie Trotter’s footsteps. Watch this space for more peeks. #finediningexperience #gourmet #thankyouchef #celebration #somethingspecial by @dyltrot

@charlie_trotters Guest Chef Vol 13: Ment’or Fundraiser Dinner in the books! Just Wow, what can I say… the positivity was felt throughout the building on this one.

A Huge Thank You to our headlining Chefs:

@chefbrianlockwood (who we are grateful to have in Chicago!)

@philiptessier (who is so loyal he came back for a 2nd Trotter dinner!)

and @gavinkaysen (who had a personal connection to my father through a handwritten correspondence that led to a great friendship)

Chef Craig Wolf brought us home with a Wagyu course right out of the original cookbook.

@kenfredricksonms curated a thoughtful and beautiful wine pairing that matched perfectly with the wonderful food.

@ryan.castelaz & @oliviafadden knocked it out with NA cocktail pairings and a warm presence in the bar!

The most important moment of the night you will see in these photos. @saorikawano77 of @korinknives flew in from nyc, dining for the first time in 20+ years. She came right to the kitchen, and gifted EVERY chef with a personalized, engraved, beautiful Japanese knife. We were all so moved by her generosity, and it was clear her intentions: to help propel the next generation of chefs forward, to pick up the baton and lead the charge one day, as the headliners are doing now.

That is also the mission of Ment’or @mentorbkb who I was so fortunate to partner with on organizing this incredible dinner. All I had to do was open the door, and the talent poured into the building.

Thank you to @samocchino for driving in from Minneapolis to help work this dinner! You lit up every room you were in, alongside my lovely partner in crime @imakemoollamoves

Thank you @chijannini for stepping up on expo and running a tight ship!

And finally, thank you to Chef Toni Robertson @tr60611 who flew in from NYC to help prep the dinner and organize Saori’s visit back to Trotter’s. Thank you for all of your support!

FINALLY thank you for @orlyslisteningtable for working the host stand and baking our Best friend @chef_briantsev a birthday cake! You two are a blast.

Beautiful photos by Nick Robins @chilledelegance

Huge thank you to @davidfyfe_ @liam_otoole05 @blamebutter @flaminhotswitcheese @ksk814 @kolinjuckins by @dyltrot

Last night we returned to the storied halls and kitchen of @charlie_trotters this time with the opportunity to cook among my friends @gavinkaysen @chefbrianlockwood in support of Bocuse d’Or USA!

As a young chef, Trotter’s books were today’s Instagram, Google and textbooks combined and each one was a revelation of rethinking how we viewed the ingredients we worked with every day whether fish, meat, vegetables (nobody wrote a book on vegetables back then btw).

Returning to his kitchen for our second dinner with @dyltrot was an absolute privilege—cooking among friends, meeting new guests and celebrating the last and the present in the same moment. by @dyltrot

When I was around 24 years old..I started writing Christmas cards and letters to every well-known chef in the country. My intention was simple, put it out into the world that one day I would meet these people, stand among them as equals, colleagues, friends, and mentors. One of those letters went to Chef Charlie Trotter. I had no expectation of a response. None. But what Chef Trotter did next is something I've never forgotten.

Weeks after I sent that letter, a large box arrived in the mail. Inside was every book he had ever written…every single one signed by him personally. I was floored. Inspired. And quietly relieved: the letter had actually reached him.

What followed over the years meant even more. Every time I appeared in an article, he would cut it out and send me a handwritten note of congratulations. That gesture, repeated again and again, said everything about who he was, his genuine care for people, his belief in hospitality as a way of giving, and his deep commitment to lifting up the next generation.

When he passed, he left behind a legacy of true excellence. His son @dyltrot has since taken on the profound work of honoring that legacy, hosting Guest Chef events at his father's restaurant.

Last night, we had the privilege of cooking a meal at that very restaurant for @mentorbkb , an organization built entirely around mentorship, training, and guiding the next generation of chefs into this profession. Beside me in the kitchen were @philiptessier @chefbrianlockwood @toeknee_yang - our own local legend @marabygk It was a magical night, layered with the history of everything that happened in that space long before I ever called myself a chef.

In a world where it's so easy to pull up someone's profile with a click, I'd encourage you to write a letter instead. Don't give up on the dream behind it. You may be surprised by what comes back to you…and more than anything, you will receive what you give. So give everything you have, if everything you can achieve is what you're after. My perspective, always: honor tradition, protect legacy, and mentor others to understand the shoulders we all stand on…the ones that give us the platform we have today. by @dyltrot
