@smythchicago has 3 @michelinguide stars and is the number 1 restaurant in America. Extreme attention to detail is second nature. @chefjohnshields is/has been a huge support of myself and dream. Everything hit all the right points at the right time when it came to the restaurant. I appreciate you Chef.

@esmerochicago by new friend and inspiration Chef @adaircanacasco @alinearestaurant was equally incredible. So many flavors that took me back to my trips to Mexico and even parts of NM for a second.
Chef @grant_achatz has also been a huge mentor and supporter of mine. As busy as he may be, always has enough time to return a text or email. True living legend.

Speaking of legends, Chef Gale Gand surpised me with a batch of her famous jam, which I put on everything. The sweetest person ever.

My buddies @schwarestaurant are always a great time. Chef Caleb is a vibe on his own. Great Chef and amazing person.
.
Of course thank you God and my Team @piochefoodgroup for making this trip possible. But also to one of my oldest friends in the world Andy and his family for allowing me to stay with you. Always a home away from home for sure.

This summer has been by far the most in influential three months of my life, and I owe it to a handful of individuals.

To start thank you @chef_davidbreeden for inspiring me to take on one of the most prominent restaurants of a major food capital, Chicago. Inviting me to join you at @charlietrotters for an insane dinner opened my eyes to everything my career can become. This summer wouldn’t have happened without you.

I am especially grateful for my time with @therealdpsalt and @asadorbastian. My three months I spent at Asador Bastian were highly pivotal to my career. Precision, speed, orangization, cleanliness, and the true art of cooking (not science) are the large hallmarks I learned here. I also have to mention @juanavila598 for teaching and allowing me to take part in the bread and pasta program for all of eat well hospitality.

Thank you @gandiascatering for letting me into your family and giving me another fun upbeat experience in the world of weddings and catering. You encouraged my independence and skill set in very major events.

A final thank you to everyone I got to cook with and for this summer. Never a dull moment.

A new energy is coming to one of Chicago’s most storied dining rooms.

816 W. Armitage has long been home to some of the city's defining culinary moments. This summer, @esmerochicago continues that legacy with a limited-run tasting menu led by Chef Adair Canacasco.
