For Issue IX, Al Rawiya sat down with natural and nomadic winemaker Rami El-Sabban ( @el.sabban ) to talk about wine, land, heritage, and sovereignty.

From working with indigenous grape varieties and regenerative agriculture to tracing winemaking back to its ancient roots in Bilad al-Sham, Rami sees his practice as one that goes beyond producing wine alone. It is a way of reclaiming identity, preserving heritage, and building a relationship with the land grounded in collaboration rather than scarcity.

من العمل مع أصناف العنب المحلية والزراعة المتجددة، إلى تتبّع الجذور العريقة لصناعة النبيذ في بلاد الشام، يرى رامي في ممارسته ما يتجاوز صناعة النبيذ بحد ذاتها. فهي بالنسبة إليه وسيلة لاستعادة الهوية، والحفاظ على الإرث، وبناء علاقة مع الأرض تقوم على التعاون بدلاً من الندرة.

Sometimes called ‘nomadic’ – other times ‘flying’ – winemakers, this troupe of mavericks eschews the idea of being permanently wedded to a particular vineyard or set of vineyards. Instead, they travel around the world making wine in different places by partnering with local grape-growers and wineries:

An early rise today to wrap up harvest! The Obeideh came in sourced from two different vineyards from the big boss himself, Elias Maalouf of @chateaurayak.

The first parcel is in the village of El Khodr in the Bekaa Valley, sitting between 1,000 m and 1,100 m above sea level. The fruit is showing gorgeous color and ripeness, and will be the driving force behind the classic Obeideh aromas.

The second lot comes from a nearby terroir perched higher up at around 1,400 m, and those berries were smaller and will drive the freshness factor!

The berries are all macerating on skins until further notice :)!

I also checked in on the cellar, and the Pinot Noir from Ammiq is really showing off right now!! taken in Râs el Harf by @el.sabban

Spent the day tasting through the new wines, and they are already showing beautifully in the glass…

The season has been so insane and the wines will show you that, I promise!! Just one final grape left to harvest this year, a variety we’ve never worked with before!

Yesterday was a beautiful morning spent pressing the Merwah with the good ol’ manual press, followed by racking the Pinot Noir off its lees.

I saved some of the lees for an experiment and headed down to Beirut. Made a quick pit stop, only to remember I’d left a still-fermenting bottle in a hot car… trust Dionysian laughter to echo loudest right when you’re seconds away from a meltdown 🥰

$Merwah from Dimane arrived today! The berries came in sun-kissed, set for a few days of maceration to bring out everything I love about this variety. Also: the Pinot Noir was split into different fractions & vessels this year, and are just finishing up their primary fermentations. I am so pumped for this year’s experiments… they’re showing incredible promise!!! Now, enough of my yapping. While we wait for the Obeideh and Merwah to ripen, thought it was right to introduce the 2025 MAJD! I have decided to slowly pivot away from Viognier and start using local grapes instead. The Merwah is from Dimane in the Bcharri region (thanks @merselwine), where Eddie has been slowly yet surely cultivating the land for more and more indigenous varieties.

100% Merwah
~1400m above sea level
11% ABV
11 days on the skin in stainless steel tanks
9 weeks of batonnage

I produced this MAJD with a strong confidence that it will age well, and can’t wait to continuously try it in the coming years!

What an eventful weekend that was! Started it off with a beautiful day spent in Dimane with @merselwine, @heyawines, @lailamaghathe & @dar.richi. Always a good time with them - thanks for the invite, gang ❤️

Spent the next day celebrating my brother (and now work wife at @onetrickpony.beirut) @twsoufan’s birthday with a BBQ tucked away in the mountains. Wish him a happy belated birthday!

Closed off the weekend as a guest winemaker for @sila.table x @earth.topaola’s pop-up dinner! Incredible food, incredible theme, and it was such a pleasure to meet everyone there - thanks for supporting our work!

Updates on the Pinot Noir(s) soon, we’re trying something new (as usual) this year 🕺🏽 taken in Lebanon by @el.sabban
