Ohh these were good! Matcha coconut macaroons 🍵🥥

I used @elahmatcha Culinary Matcha for these, and I was SO happy with how beautifully green they turned out 💚 The matcha flavour came through really nicely too!

Recipe for 7 matcha coconut macaroons (or 12–14 smaller ones):

▪️100 g sugar
▪️100 g coconut flour
▪️1 tsp vanilla sugar
▪️2 tsp good culinary matcha
▪️2 egg whites
▪️50 g butter
▪️50 g white chocolate (or dark)

Put all the ingredients (except for the chocolate) in a pot and heat until the sugar has completely melted.

Shape them into small balls and place on a baking tray with baking paper.

Bake for 9–10 minutes at 175°C.

Let them cool completely without moving them from the tray. Melt the chocolate over a water bath, then dip each macaroon in the chocolate so the bottom is covered.

And enjoy! 😻

I used white chocolate only because I ran out of dark chocolate 😂 taken in Copenhagen, Denmark by @elahmatcha

“Would you like to stay forever?” 🪡🌀💙

These are Coraline-inspired matcha shortbread cookies with banana icing glazed on top. 🍵🍌🍪 I tried my best to shape out the little button cookies, LOL. 🤣 Don’t worry, I’ll try again, but these were SO good! 🥹

And of course I had to pair them with a banana matcha latte. 🍌🍵✨

Matcha Shortbread Button Cookies 🍵🍪

84g unsalted butter, softened
30g powdered sugar
¾ tsp vanilla extract
150g all-purpose flour
4g matcha powder @elahmatcha culinary matcha
Pinch of salt

Cream the softened butter and powdered sugar until smooth, then mix in the vanilla. Add the flour, matcha, and salt and mix until a soft dough forms.

Roll out the dough and cut into small circles. Use a smaller round shape to gently make the inner button indent, then poke 4 little holes in the center. 🪡

Bake at 325°F (163°C) for 12–15 minutes, or until the cookies are set. Let them cool completely before adding the icing.

Banana Icing 🍌✨

25g ripe banana, mashed very smooth
75g powdered sugar
⅛ tsp vanilla extract
Tiny pinch of salt

Mash the banana until smooth, then gradually mix in the powdered sugar until you get a thick, glaze-like consistency. Spoon a little over each cooled cookie and let the icing set.

Banana + matcha might seriously be one of my favorite combinations now. 🥹🍌🍵💚
