Pray 4 Me. That’s the name of the signature vegan burger by @souleyvegan chef-owner @iamtamearradyson. The chef who won Beat Bobby Flay. Sometimes it seems the vegan restaurant industry as a whole might be in need of prayer. The list of vegan restaurant closings in the past couple of years is long and, as Dyson puts it, heartbreaking. Among the casualties are iconic vegan restaurants like @kitchen17chicago, Inglewood, CA’s 18-year-old health food favorite @stuffieat_inglewood, and @candlecafe, a New York institution with origins dating back to 1990.⁠

Dyson herself wound up closing Oakland, CA-based @souleyvegan in 2020, after 14 years of serving Pray 4 Me burgers plus an astonishing range of made-from-scatch, Creole-gone-vegan dishes from Southern fried tofu to red velvet cupcakes.“That was our home,” she says. “It’s where we built the brand.”⁠

Okra deserves better than a polite nod before summer ends. Its story stretches from Africa to India to the American South, and there are plenty of delicious ways to put it to work. Pair it with potatoes in a knockout Indian curry, ferment it, or let it mingle with tomatoes, corn and lima beans.

Did you know Tuesday was the first day of fall? It’s hard to believe it, yet here we are. Don’t get sucked into the trend of artificially pumpkin-spiced everything and celebrate with the real stuff. Papaya leads two lives. We mostly know it as a tropical fruit, but when it’s green, like this local Miami papaya, it tastes more like a vegetable. 
Shred it like you would for cole slaw, toss it with Sri racha, soy sauce and lime 🍋‍🟩 and you’ve got green papaya salad, a last taste of summer.
