Grouse roasted on the crown - confit and deep fried leg - girolles - cabbage and bacon - bread sauce - brandy sauce - chateau potatoes - apple and fennel

1) Orkney scallops, cucumber, buttermilk, elderflower, dill
2) cured line caught bass, Scottish brown crab, tomatoes, vanilla, lovage, nasturtium
3) Tweed valley beef, pickled onion, Arran mustard, Bovril
