Thanksgiving is just around the corner so I figured I should share my sweet and savory potato au gratin. This recipe is for a family of four 🤍 making this dish a great dish for a family of four.

2 medium russet potato
1 large sweet potato
2 cloves garlic minced
3/4 tsp salt
1/4 tsp ground black pepper
1/2 stick of butter
1 C heavy cream
2 tbs of fresh thyme chopped (more for presentation)
1/4 cup mild cheddar shredded
1/4 cup extra sharp cheddar shredded
1/2 cup Gruyere shredded
1/3 C Parmesan

* Preheat oven to 400°F. Lightly grease your baking dish.
* Mix the cheeses together in a large bowl, set aside.
* In a small saucepan melt butter. Turn off the heat and add salt, pepper, garlic, heavy cream, and thyme. Set aside.
* Carefully peel and slice potatoes using a sharp knife.
* Stack the potato slices as seen in the picture above, topping off with the cheese mixture. Pour the heavy cream mixture on top.
* Cover gratin tightly with foil. Bake 30 minutes. Uncover; bake until top of gratin is golden and most of liquid is absorbed, about 25 minutes longer. If you want to add more cheese for a crisper finish, add more Parmesan on top.
* Let stand 10 minutes; top with fresh thyme springs and enjoy!

Mexican Corn Pasta Salad
This pasta salad is so easy and delicious, you will definitely want to save this one for your next picnic!

What you’ll need:
Cooked penne
@traderjoes Mexican street corn
1 chopped red bell pepper
1 chopped shallot
1 chopped green onion
Bunch of cilantro chopped
Arugula
Mayo
Salt and pepper

While the pasta is cooking according to the package, mix the greens together and cover. Place aside.
Cook @traderjoes Mexican Corn according to the package. Drain the pasta and mix with corn, and let cool.
Add about half a cup of mayo (this is why the pasta and corn have to cool).
Add salt and pepper to taste.
Mix in greens to pasta and corn, top with cotija cheese (included in the Mexican corn package) and enjoy!!! For even more flavor cover and keep in the refrigerator 2 hours before serving.

🍪🎃 If Halloween was a cookie… 🧡🖤

Thick, soft, chocolatey, loaded with Halloween @oreo + white chocolate chips. Basically October in cookie form. 👻

CHOCOLATE COOKIES & CREAM COOKIES

Ingredients:
1 box white or vanilla cake mix
1 (3.4 oz) box instant chocolate pudding mix
2 eggs
½ cup vegetable or canola oil
1 tsp vanilla
¼ tsp salt
12–14 Oreos, roughly chopped
¾ cup white chocolate chips

To make:
Preheat oven to 350°F and line a baking sheet with parchment.

Mix cake mix, dry pudding mix + salt. Add eggs, oil and vanilla and mix until a thick dough forms. Fold in chopped Oreos + white chocolate chips.

Save a few Oreo pieces and white chocolate chips to press into the tops for that bakery-style look. Chill the dough for 20–30 minutes.

Bake for 9–11 minutes — take them out while the centers still look slightly underdone. Let them sit on the baking sheet for 5–10 minutes to finish setting.

Soft. Gooey. Chocolatey. And very Halloween. 🎃🍪🖤

This little corner is finally coming together 🤍
