Pâté en Croûte is one of France’s great culinary traditions, a dish where charcuterie and pastry come together, and where patience and precision are just as important as the ingredients themselves.

At Entier, Chef Romain gives this classic his own interpretation, bringing together foie gras, sweetbread, duck breast and veal belly within a beautifully golden crust. Each element is prepared with care, layered by hand and carefully enclosed in pastry before being baked and given time to rest. It is a meticulous process, where every layer, texture and proportion matters.

Corn is often thought of as something simple. At Entier, we like to see how far a simple ingredient can go.

Our signature Corn Soup begins with fresh corn from the Cameron Highlands, chosen for its natural sweetness and character. It’s a dish that takes far more time and attention than its simplicity might suggest. We take the corn beyond its sweetness, working to draw out the depth and character hidden within it, even making use of the cobs to capture every last bit of flavour. The result is a silky, velvety velouté that lets the corn speak for itself.

For those who already love it, consider this your reminder to come back for a bowl. And if you haven’t tried it yet, this is one signature you really should.
