French Indian Plates – Episode 1 🇫🇷🇮🇳

A French omelette with a green chutney butter: fluffy on the inside, filled with a cumin-spiced onion and tomato mix, and finished with green chutney butter on top.

Cook it gently over medium heat and don’t let it brown. For the chutney butter, simply mix softened butter with your favourite green chutney.

Perfect for an everyday breakfast.

Fig leaf & Cardamom Ice Cream

Recipe:
Take 4 fresh fig leaves (there are fig trees everywhere!!)
Blanch them 30 seconds to remove bitterness, ice bath, dry.
Infuse for 20min warm milk (120ml) with the leaves and 5 crushed cardamom pods. Filter and cool.
Whisk in 80g sugar + 8g cornstarch. Cook on low until it coats the spoon. Cool completely.
Whip 240ml double cream to stiff peaks. Fold the custard in gently, keep it airy.
Freeze overnight, cling film pressed to the surface or put in tupperware. Let the icecream rest 10min before serving.
Add the toppings of your choice. I went for dark chocolate, sea salt and roasted pistachios 🍫

Mangoes don’t grow in Europe (yet)

Peach lassi - yogurt or whisked curd, fresh peach, cardamom, maple syrup, mint (I used a mixed mint juice, but fresh mint is as good), salt, ice. Adjust the ice depending on how thick you like it - I prefer mine on the lighter side.

Save this for summer 🍑

Chapli kabab in a baguette ! Super flavourful sandwich, crusty with the bread and juicy chicken meat patties. Also the garlic chutney is a must.

Summer Périgord truffle is the best treat and it’s cheap.

2 recipes in less than 10min:

🍳 Fried quail eggs with some sliced truffle on top. I use a cookie cutter to make perfectly round and even pieces. Add salt and pepper!!

🍝 Truffle gnocchi: in a pan add butter, two garlic gloves, chopped truffle, and let it infuse. Add some pasta water and then the gnocchis (cream optional).

It’s Monday and I wanted a tartare, but with an Indian twist.

Green chutney with the herbs from the garden, green chilli, ginger, lime. Fried rice paper instead of bread.
