Chef Rodolfo Sandoval (@el_rodolfin) built his katsu sando to solve a waste problem. At the time, Ernest (@ernest.sf) had local halibut sashimi on the menu, which left behind a pile of trim too good to throw out, so Sandoval spent a week testing textures before landing on a farce. The halibut is folded with lemon zest, egg, and tempered butter until it holds together like a fish cake, closer to a chicken nugget than a fillet. He fries it and sandwiches it in toasted Japanese milk bread with a green garlic tartar sauce, shredded iceberg, candied Meyer lemon peel, and diced takuan. The whole thing traces back to convenience store katsu sandos Sandoval ate on trips to Tokyo and Kyoto, though he says the smell reminds him more of the McDonald's runs that felt like a treat growing up. by @ernest.sf
