Porchetta 🐷

Traditionally a boneless pork loin with the belly still attached. Seasoned with lots of herbs and spices. It’s meant to be slow roasted until tender, then crank the heat to get some nice crispy skin.

I really enjoy making these for customers. Plus the leftovers make great sandwiches the next day 😋.

Although we didn’t place where we hoped, the lessons from this competition were invaluable. Naturally there’s disappointment. But I’ve learned over the years with competing in martial arts that competition is much more than winning or losing. It’s the pursuit of personal growth. The willingness to test our skillset honestly. The dedication and discipline leading up to the competition with practice, visualisation, and honing of technique.

Competition applies a pressure you can’t always replicate in practice. The noise, the pivoting when a mistake is made, managing adrenaline and keeping a clear mind. I learned through this experience that I could perform even when I was scared, in an arena of 3k people. To breathe and execute next steps. Where my knife skills can be dialled in even more.

Team work is everything. Throughout this journey our team has grown closer, and in those 3.5hrs we worked together. Our display was creative, clean, and sophisticated. From mortadella filled boneless chicken wings, a boned out half lamb tied into a roast, to a bone in pork coppa roast. It was full of innovation and we put our hearts into it. We didn’t execute perfectly, but we rose to the occasion as a team.

The night before I had so many nerves. But the next day all the nerves turned into excitement and exhilaration. I couldn’t wait for us to start cutting.

But all wasn’t lost…we still made the stage winning 2/3 best sausages!! It’s been a highlight of my career. It was thrilling and so joyous! I’m very grateful to be apart of it all.

A week ago today we won best beef and gourmet sausage! What an incredible feeling to be called on stage and recognised for all our hard work. I’m proud to have represented my country 🇺🇸.

World Butchers Challenge 2025-Paris

We did it!! I’m so proud of my team for the display we put up, and the team work we had in all that chaos. Our communication was strong and everyone stepped up to help each other out. It was down to the wire…we got the backdrop up at 1 minute left!

All the way home I was reflecting on what an incredible experience this was. Especially for my first time competing. I’m proud of myself for stepping into the arena and staying composed under the roar of the crowd. We had a plan, but competitions always bring unexpected curveballs. Being flexible and able to pivot was key. There’s things I could’ve done better, but now I have a concrete list of things to work on.

It was so thrilling to cut under pressure. I’d definitely compete again. I couldn’t have asked for a better team to do this with! Team USA @butchersofamerica 🇺🇸

Competing is Paris at WBC was a once and a lifetime experience for me. This past week has been a whirlwind. Meeting all the teams, exploring the city, and the anticipation of the competition was so exciting.

I’m most grateful I got to experience this whole journey with my mom! My number one supporter and cheerleader. A few years ago competing at this level was just a dream. She pushed me to try out for the team and my dream became real. Couldn’t have done it without her in my corner ❤️.

And we’re off!! ✈️This has been such an incredible journey…over a year in the making. I’m so proud of my team and how far we’ve come. I can’t even describe how grateful I am for this experience, no matter the outcome. It’s made me a better butcher and a better part of this community. The excitement has kicked in. It’s almost surreal that soon we’ll touch down in Paris and the real work begins.

Very proud to represent my country and show the world what @butchersofamerica can do! 🇺🇸

Bone-in Country Style Pork Ribs.

These don’t actually come from the rib section. Country style ribs are cut from the shoulder of the pig, specifically the Boston butt. Crosscut with the shoulder blade still intact, then cut into strips.

There are a great alternative to spareribs and have so much meat on them! Cooked long enough the meat will fall right off the bone 🤤. You can smoke them slow cook them in the oven. They do great with a rub or a marinade.

It’s not often you see 100% grassfed beef this marbled. wow! Fire up the grill for these beauties 🤩.

Pulling the brisket off the forequarter. It’s such a versatile cut. Does great smoked and develops an incredible crust. Or slow cooked in the oven and still maintains its juicy texture. I personally like to smother mine is caramelised onions, tomatoes, and braise for 4hrs in the oven.

Just 3 weeks until I hop on a flight ✈️ to Paris for the @worldbutcherschallenge. This is going to be one of the most exciting chapters yet. 😋

Just a little over a month away until we compete at @worldbutcherschallenge in Paris! It almost feels surreal that after a year of prep we’ll soon be on a flight to compete. I’m so proud of our team and the tremendous growth we’ve shared. I can’t wait for us to execute our display and really show everyone what we’ve got!!

We’re in our final push of fundraising to help get the team there. So if you’d like to support, head to the link in my bio to donate. ❤️

See you soon Paris!

Mandatory giant meat pic 🤪.

One of the many reasons I love whole animal butchery is how empowered I feel managing beef. For reference I’m 5’1 and sometime have to use a step ladder to rail break. But I make I get creative and make it work!

A carcass can range anywhere between 750-900lbs when it comes in. So breaking it down into primals, and even carrying it to the block can feel like a workout. Butchery has definitely made me stronger and built my confidence of what I can physically do💪🏽. Nothing is more satisfying than lifting heavy chunks of meat all day and pushing myself to a better cutter.
Plus…it’s just fun!
