This September, we welcome Flame & Pearl (formally known as 4 Eats Sake) to Ferox for a new culinary residency built around a shared philosophy: exceptional ingredients, thoughtful technique, and genuine hospitality.

Led by Josey and Hannah, Flame & Pearl brings together two sides of the dining experience. Josey draws on more than a decade in fine-dining kitchens, bringing precision and restraint to cooking over fire, elevated BBQ and seafood. Hannah brings a background in fine-dining service and an instinctive approach to hospitality - creating an experience that feels considered, yet effortless.

At Ferox, their skillset finds a natural home.

Expect food shaped by fire, season and simplicity, served alongside wines grown and made here in Niagara-on-the-Lake. A menu designed not to compete with the glass, but to belong beside it.

Service concludes 30 minutes prior to the winery closing.

2026 Zweigelt is in. 🍇

This vintage has asked a lot of us.

Disease pressure. Water pressure. Meso-climatic shifts. A growing season that demanded constant attention in the vineyard and patience at every turn.

But the reward is now coming through the cellar doors.

The fruit arriving at Ferox is phenolically ripe, with beautiful organic chemistry - giving us an exciting foundation for the 2026 vintage.

Harvest is already well underway with Grüner Veltliner, Pinot Gris, Sauvignon Blanc, Chardonnay, Riesling, Pinot Blanc, Gewürztraminer and now Zweigelt safely in the winery.

After this week, our attention turns to the reds: Merlot, Cabernet Franc, Syrah, Cabernet Sauvignon, Malbec and Petit Verdot over the weeks ahead.

Challenging vintages demand precision. They also have a way of producing some of the most compelling wines.

There is plenty of work still ahead, but we’re excited about what 2026 is showing us - and even more excited for the wines that will eventually make their way to your glass.

A new season arrives at the table. 🍂

We’re pleased to introduce the Flame & Pearl Seasonal Menu - an expression of thoughtful cooking, warm hospitality, and the flavours that define this time of year.

Beginning September 9, join us at Ferox Wednesday through Sunday, with the first order being taken at 12pm and concluding 30 minutes before the winery closes.

Thursdays look a little different. For Ferox: After Work | 4-7pm, Flame & Pearl will be serving a rotating selection of bites created specifically for the evening. The final reservation for the Seasonal Menu on Thursdays will be at 3:30pm, before we transition into After Work service.

Winery member Monday featuring Ferox Winery! The story of Ferox Winery began in 2015, when Fabian and Stephanie Reis hand-harvested their first Merlot and Cabernet Franc grapes, producing just three barrels of wine. Inspired by the Latin word for “fierce,” Ferox was born from a vision to combine knowledge, innovation and tradition in pursuit of exceptional wines. In 2018, Fabian and Stephanie made Niagara-on-the-Lake home, purchasing Vignoble Rancourt Winery and its mature Bordeaux vines planted in excellent soils. Today, Ferox continues to pursue superior quality from vineyard to bottle, with sustainable vineyard practices at its foundation, including Ontario Sustainable Winegrowing Certification and a commitment to healthy soils, biodiversity and herbicide-free farming. taken in Ferox by @feroxwines
