Same recipe. New rules. Kitchen to factory.

A recipe that works in a test kitchen still has to be re-engineered before it runs on a factory line.
The UAE plans 140 new locally made food items for 2026 and 2027 (Gulf News). Gulfood Manufacturing runs 3–5 Nov in Dubai.
I have no factory of my own: I write the process and support trials with your manufacturer.

What broke first when your product moved to a factory: texture, taste or shelf life?

What's missing at Lebanon's industry expo?

We walked the floor. Strong launches this year.
But almost no high-fiber, low-sugar products.

Protein was the trend. Fiber is next.

Planning a high-fiber product? Start with the right fiber.
Send me your product on WhatsApp: link in bio.

Same 6 g of fiber. Two different drinks.

Psyllium turns a drink into gel.
Inulin stays in the drink.

Pick the wrong fiber and the product turns hard as a rock or breaks.
Which fiber, how much, in which product: each choice changes the result.

Making a high-fiber bar, drink, baked good or chocolate?
Start with the right fiber. Send me your product on WhatsApp: link in bio.

Dubai, 3–5 November. I'll be at Gulfood Manufacturing.

New product, less sugar or salt, more protein or fibre: if your recipe needs work, let's meet for 15 minutes.

Bring the problem, not the formula. DM me or WhatsApp (link in bio) to book a time.

Protein + fibre: Innova’s #1 food trend for 2027.

Innova’s top trend is more nutrition per bite, in the foods people already eat. Launches with both protein and fibre claims grew 15% in a year.
The catch: in one recipe, protein and fibre compete for the same water, and texture is usually what suffers first.
So I add them in steps, and test taste, texture and shelf life together.

Which everyday food should get protein and fibre first: bread, laban, snacks or drinks?

Would I sell your formula twice?

A factory once asked me for the same product I had built for another client. They offered to pay more. I said no.
The formula belongs to the client I made it for. Not to me, and not to the next company that asks.
My rule: a product with a different function, I can take on. The same product, with the same function, for the same audience? No. That's a conflict of interest.

Have a product idea you've been holding back? Send it to me on WhatsApp, link in my bio. Tell me about the product; you never need to send the formula to start.

Every food fails. The question: what fails first.

Texture, taste, colour or safety: the answer decides the formula, the process and the pack.
Chips lose their crunch to water in the air. Oil turns rancid with oxygen. Honey lasts because microbes cannot find water.

What fails first in your product: texture, taste, colour or safety?

Where does a new food product come from?

Most food engineers go deep in one industry. My work runs across many: chocolate, nuts and seeds, drinks.
Each category has its own ingredients and its own process. When you know several, you can link them, and that is where products that never existed before come from.

Got a question for the next REAL TALK? Ask it in the comments.
Have a product idea that doesn't fit one category? Send it through the WhatsApp link in my bio.

Protein milk: Saudi search interest up 49%.

That's Google Trends, July to September 2026 against the same months of 2025.
Putting 20 g of protein in a bottle of milk or laban is the hard part.
Four things push back: texture, heat, acidity and the shelf.
The fix is designed together: the right protein system, controlled timing and method, and tests to the last day on the shelf.

Which high-protein product do you wish you could find on the shelf?
