There is still plenty to do, including finishing the menu, booking system, website, suppliers...

Overwhelming, yes.

But we hope to open for the second week of December.

Once we know 100% we can do it, we'll release the first spots. (Always first for our Fivewake list)

This is just one-third of the issues we've found. 🫠

As always, it's a journey...

Every time we discover a new issue, the doubts start 🌋

It means more investment, more risk, and more what if, after all this, people don't come for dinner?

We believe in this project 1,000%. We're putting our souls into it, but I guess imposter syndrome is always there...

Nothing in life ever goes as planned. 🥲

And of course opening our first restaurant is going to be less.

Our plan was to open mid November.

Now, the electricity works have been delayed, so hopefully we will open by the first week of December.

We won't allow bookings until being 100% sure we can open.

In the meantime, we'll try to share as much as we can of the process.

When I asked Gemma what she wanted to say in the caption, she just said:

“Why do I speak so weird?”

Jokes aside, she had a cold. 😂

We’ve always dreamed of having a place of our own.
A spot where people can find us.

But the dream was never just about four walls.

We opened this business because we want to leave the planet a little bit better.

And if we all wait for someone else to do something, nothing changes.

So we’re starting here using our skills. Cooking.

Five courses.
Seasonal ingredients.
Scottish produce.
As local as we can get.
And a modern plant-based dining experience.

And hopefully, we’ll change the way people see plant-based food along the way.

Because this experience isn’t just for vegans.

It’s for everyone.

We’ve still got a long way to go.

But we’re building it from scratch.

So tag along if you want to be part of the change.

Are we crazy? 🤯

Sometimes we genuinely wonder.

Opening a plant-based restaurant in Edinburgh. In 2026. With only 20 seats.

We are honest. We’re scared.

What if no one wants to come?

What if we’ve completely misjudged this?

What if we put everything into creating something we believe in… and people just don’t care?

But then again, what if they do?

The plan is actually very simple:
🌙 3 nights a week.
🪑 20 seats.
🍽 5 courses.
🌱 One menu.

A room full of people who are curious enough to try something different.

We don’t know exactly what’s going to happen.
And that’s probably the scariest and most exciting part.

So… we’re doing it anyway.
