Mind you, he is NOT the cook of the house (we all know it’s me 😅), but this man tried cooking a whole meal all by himself without my help to surprise me.

He was STRESSED af LOL but he delivered. We had beef chow fun, steamed crab, branzino sea bass, & balut 💖

Holiday series continues - CREAMY TUSCAN SALMON PASTA

— onion powder
— black pepper
— olive oil

For the creamy sauce:
— 1/2 cup of diced onions
— minced garlic
— 1.5 cups cherry tomatoes
— 1/4 cup sun dried tomatoes
— 2 cups heavy cream
— grated parmesan cheese to taste
— seasonings: 1 tsp each garlic salt & powder, 1 tsp onion powder, black pepper, 1/2 tsp paprika, 2 tsp Italian seasoning

1. Pat salmon dry with paper towel. Add a light coat of oil on the salmon filets and season both sides with garlic salt, garlic powder, onion powder, and black pepper.
2. In a pan on med-high heat, pan fry salmon for 3 mins each side. Set aside.
3. Using the same pan, add cooking oil, diced onions, and minced garlic. Cook until fragrant and then add in cherry tomatoes.
4. Once cherry tomatoes have softened, smash it down and then add in the sun dried tomatoes.
5. Reduce heat to low and add 2 cup heavy cream and grated Parmesan cheese. Season sauce with 1 tsp each garlic salt & powder, 1 tsp onion powder, black pepper, 1/2 tsp paprika, & 2 tsp Italian seasoning. Taste and add more seasonings and parmesan as needed. Optional but add in tomato paste for coloring.

HOLIDAY SERIES continues with my fave side dish — ROASTED CORN with some beef fat 🌽

INGREDIENTS:
— canned corn (I used 4 cans)
— diced onions
— seasonings to taste: garlic salt, garlic powder, onion powder, black pepper
— 2 tbsp some sort of fat (duck, beef, bacon, etc)
— cooking oil

1. Add cooking oil in pan on medium heat. Add diced onions and cook until translucent and fragrant. About 3-4 mins.
2. Set cooked onions aside and add in canned corn. Keep cooking until liquid has evaporated. About 5-6 mins.
3. Once liquid has evaporated, let it cook without touching it too much and every 3-4 mins, flip and mix. We want it to roast to give it the perfectly browned bits. I repeatedly did this step until majority of my corn has browned (total time: around another 8-10 mins)
4. After the corn is cooked the way you’d like, season with garlic salt, garlic powder, onion powder, & black pepper to taste.
5. Add in fat, onions, and mix well.
6. Enjoy!

WELCOME to my new series where I show you what I plan to make this holiday. Steal my ideas and eat just as good ✨😛

Starting off with MINI CHICKEN POT PIES

Makes 10-12 pcs
— 2 chicken breast
— 14-16 fl oz chicken stock or enough to cover chicken
— 1lb frozen mixed vegetables (peas, carrots, green beans)
— diced yellow onions
— minced garlic
— 1 stick of unsalted butter
— 1/3 cup AP flour + another 1 tbsp for table surface
— 2 cups whole milk
— 2 cups chicken broth (get from the chicken we cooked in)
— seasonings: garlic salt, garlic powder, onion powder, black pepper, dried parsley, thyme, & chicken seasoning to taste
— 1 package pillsbury pie crust premade dough sheets

1. Preheat oven to 375F and grease muffin pan.
2. In a pot on medium high heat, add in chicken breast and add in chicken stock until covered all the way. Bring to a boil then lower heat to medium-low, cover and cook for 12 mins.
3. In a separate pan on med-low heat, add in 1 tbsp butter and then diced onions. Cook for 2-3 mins and then add in minced garlic and cook for another min.
4. Add 5 tbsp of butter then add 1/3 cup flour. Mix well and cook for 2 mins or until thickened.
5. Add 1 cup chicken broth that we cooked the chicken in then slowly stir in 1 cup of milk. Then repeat this step one more time (total of 2 cups broth & 2 cups milk used). Mixing the whole time and stirring.
6. Add in 1lb mixed frozen vegetable and dice cooked chicken then add into the mixture.
7. Add in more broth and milk as needed until desired consistency. Season with garlic salt, garlic powder, onion powder, black pepper, dried parsley, thyme , & chicken seasoning to taste. Let the mixture cool off.
8. Flour your surface, use circle cookie cutter or a small bowl to cur out pie crust and add in the compartments then add in 2 tbsp filling.
9. Bake at 375F 30-35 mins or until golden brown and crispy. Use a butter knife to gently remove from pan.
10. Enjoy!
