Maison @perrierjouet an house that is been in champagne from 1811 by Pierre‑Nicolas Perrier and Rose Adélaïde Jouët, shortly after their marriage. A house that focus on the purity of the grape Chardonnay by it influence of flowers and finesse, one of the first houses to plant Chardonnay at 1846 at Cremant Grand Cru.
Nowadays is a house that is focusing on the degenerative vineyard's introducing flowers and cereal to make make the plot more organic but also more "in nature".

Fun facts about PJ champagne:
* Blossom rose is not about blossom but the french word "cote of arms" a champagne that represents the opulent of chefs and fine cuisine l.
* Is one of the champagne that uses the less reserve blend on the NV of champagne 15%
*The "Grand brut" was about the need of a less sweet/sugar champagne in the early 20th century by the English monarchy, not just because was to sweet but also the teeth rotting problem.
*PJ keeps around 6000 bottles magnum of 1999 the eclipse year/last year of the century for safe keeping.
*The flower found in PJ Belle Epoque is a Japanese Anemone, a flower that blooms the same time has the grape Chardonnay but also represented an era, house’s dual passion for nature and the arts, echoing the founders’ sensibilities.
*The house contributed to the evolution from very sweet styles to drier, more “modern” Champagne producing the Cuveé "K" lowering the sugar from 200+ gr to around 30 gr a significant drop.
*One last fun fact the Maison Perrier Jouet oldest the world's oldest champagne vintage, from 1825.

This was a wine that I never tried before and was so beautiful!
Blend of Tempranillo (Tinto Fino) and Cabernet Sauvignon. Deep ruby, aromas of blueberries, dark cherries, prunes, liquorice and a meaty/savoury touch, over mineral notes from the limestone soils, tasting it was smooth and concentrated, with ripe dark fruit, liquorice, subtle toast/spice from oak, fresh acidity, fine tannins and a long, savoury finiah.

Overall gives you the idea how a wine should evolve after at least 10 years, it's involving, it's passionate, for each time you drink you feel something new. Is truly a fun wine to drink if you have time and patience to wait this long.
When served I remember that people cried of delight!
Spain now it's sh***.

Today I started a project for my little Julia that will take 16 to 18 years. The idea is to grab the F1 Nikkon from my mother (film) and 1.8DC Sigma (modern), to take photos of her or something related to her. I won't develop photos until she comes of age of 16 or 18 still deciding. Time travel or time freeze, fun and patience project!
