Some moments deserve to live a little longer. ✨

When we created CARNAVAL Nights, the intention was always bigger than what was on the plate, what was poured in the glass, or what was playing through the speakers.

It was about creating a space where people could gather, experience culture, and genuinely connect.

@__latinag , Founder @ilovelalucha and one of our incredible CARNAVAL Nights partners, shared what she enjoyed most about the evening — the energy of the space, the sense of community, and what happens when people come together with intention.

That is the heart of CARNAVAL.

CARNAVAL began at the roots. 🪶

A grassroots exploration of heritage, family and the flavors that connect us across generations.

As Chef Giovanni Miles began reaching into his family history, he discovered the Caribbean story woven through his lineage — his grandmother, Claudette, from Panama🇵🇦 by way of 🇧🇧Barbados, and his grandfather from Panama by way of Jamaica 🇯🇲

That discovery became inspiration✨

Because Caribbean cuisine is not one island, one flavor or one story. CARNAVAL was created to explore beyond the familiar — celebrating the flavors, cultures and connections that stretch across the Caribbean and throughout the diaspora.

For Chef Giovanni, food should do more than feed you. It should evoke a memory. Take you back to a place you’ve traveled. Introduce you to somewhere you’ve never been. And, for a moment, transport you there. 🌍🛩️🗺️

Just a week and a half before the launch of the CARNAVAL Nights series, we lost Grandma Claudette. What began as an exploration of heritage took on an even deeper meaning — honoring the roots, carrying the stories forward — a continuation of legacy.

We always said his hair would be his decision. When he was ready, we would be ready too.
