We are still dreaming of our recent trip to Sicily with @oldways_pt and @motherpizzeria

We learned all about the ancient civilizations that have ruled Sicily and how they each left behind a different layer of culinary influence. We tasted the most fragrant almonds in Noto with an incredible visit to @caffe_sicilia_noto and a private tour by @assenza_corrado who we work with through @gustiamo

We made our own chocolate in Modica, visited ancient Greek ruins in Agrigento and Syracuse, explored the market and charming streets in Ortigia and finished the trip eating all of the street food in Palermo and teaching a fun cooking class @gamberorossoacademypalermo

If you missed this trip, we’re excited to announce that we will be leading another tour to Bologna and Liguria from September 13-19 in 2027 with @modernadventurists Bologna is one of my favorite food cities in the world and we will immerse ourselves in ancient cooking traditions that have inspired so much of our cooking at Giusto. Kevin O'Donnell has been preparing for different outcomes since he was sixteen years old. 🍝⁠

He was court-ordered to an alternative school in Rhode Island where a retired Johnson & Wales chef named Andy ran a culinary program. He signed up to pass the time. Twenty-five years later he is a multi-time James Beard nominee with two restaurants on the Newport waterfront and a philosophy about different scenarios that comes from a lifetime of navigating them.⁠

There are many ways to learn and pass down knowledge.

Cooking with your children and grandchildren; or the reverse, looking to one’s older relatives to learn about your own culinary heritage. Collecting cookbooks and using online resources to create new family favorites are excellent ways to embrace heritage foods. Educational travel is one of our favorite ways.
