Hidden Harewood by Head Chef Will Campbell

Hidden Harewood is the dream event for a chef who appreciates the stories associated with the food they’re serving—an opportunity to share all the work that goes into that short six-hour experience.

The best part for me is having the opportunity to connect with guests throughout the evening, share the inspirations behind the food and some of the processes that have gone into making everything happen.

This year’s menu was guided by almost three years of development, creating products and ingredients that are uniquely Harewood, picked at their prime and left to develop flavor over time.

We tried to start the menu with flavours of the Harewood landscape, utilizing mushrooms grown for us by our friends at the Yorkshire Mushroom Emporium and earthy flavours reminiscent of the surrounding woodlands.

The second part of the menu drew inspiration from the grandeur of Harewood House, taking the form of a quintessentially British picnic to be enjoyed by the lake, similar to how many would have throughout history. Guests received a wicker basket filled with gingham napkins, potted meats, and summer salads to graze

The service ware we used for the event was also carefully considered: the crockery came from Iona Ceramics, each piece unique, featuring inlaid grasses from the field behind the kitchen or a glaze made from ash from the biomass that powers the estate. The chefs also got involved, painstakingly hollowing hundreds of kohlrabi bowls over the month.

We finished the evening with s’mores around the fire, allowing guests to create their own marshmallow stacks with brown butter cookies topped with crunchy bites and candies. It’s a fun way to end the night and it allows guests to relax, there’s no rules and they can make it their own by @goggins

Orkney Scallop, Yorkshire Rhubarb, Smoked Highland Tallow

Big fat hand-divers from @hodgsonfish hammered on the konro and glazed in salted scallop roe caramel before resting up to temperature in @estateharewood ā€˜s grassy highland beef fat. We popped it in a bowl of sour rhubarb dashi from this years @rhubarbrobert haul and seasoned it with last years rhuboshi furikake. by @goggins

A huge thank you to all who joined us for our Mother’s Day at the Hovels event last weekend šŸ’āœØ and a big thank you to our English sparkling wine partner Nyetimber šŸ„‚, who provided Mums with a glass of their classic cuvée to enjoy with their meals.

HF & DP’s Head Chef Will Campbell’s menu was described as ā€œa Sunday roast crafted by the Godsā€ šŸ”„šŸ½ļøā€¦ and who are we to disagree? šŸ˜

Would you like to see us do more Sunday roasts at the Hovels? šŸ‘€

Christmas menus are overplayed.
So this year @harewoodfoodanddrink went the other way. knock-off Christmas ā€œclassicsā€, cheap puns, booze rammed in where it absolutely doesn’t belong, and not a turkey in sight.
Huge thanks to the whole team who’ve grafted all year, and extra love to @zakwilson07 k for his final stint in the kitchen (for now). No carols just clichés and chaos

* 5 bird roast,
- kfc partridge leg
- Pheasant and wild leek Kiev
- Pigeon and pine skewer
- Duck ham on horseback
- Chicken liver and Xmas cake tart
* winter ā€œWaldorfā€ salad
* Venison tataki, mulled wine and acorn soy
* Beetroot and red cabbage pot pie
* Partridge in a pear tree
* Brilliat Savrin cheesecake
* Gold, frankincense and myrrh petit fours

Could this be the perfect restaurant for the climate?

On paper @restaurantpine could read like a greatest-hits compilation of current fine dining trends. Farm-to-table fashion, preservation lead cooking taken from whichever age old cuisine is currently en-vogue or the service style that balances both acute attentiveness with nonchalant, neighbourly ease.
But it couldn’t feel further from a box-ticking exercise to satisfy the algorithm.

@cal_byerley @sian_byerley have absorbed all this noise, refined it, stripped of its self-consciousness and fussiness and spat it back out better than ever.

Above all of this is the humanity of the place, the entire team’s personalities are on show, individual voices but very much one song. From the kitchen, @ian_waller_ and the menu to @vanessa.stoltz wine list and finesse, each gardener, grower, farmer and producer, everything is felt rather than shown off, rooted in genuine care for hospitality and consciousness.
It’s an independent, self-built and honest restaurant for sure but operating at a level that’s far more quietly accomplished. by @goggins
