Zakros, Eastern Crete, 🇬🇷

This is where the olive oil comes from that runs through the ferments and soaks you eat 💚

It has been so much more than incredible to spend time with Will and Harry, founders of @twofieldszakros

The values shared, the commitment to a much better way of doing things. I cannot wait to write about their work in next week’s newsletter. But for now, it’s off to Athens for a few nights before the trip home to the west coast of Ireland.

Zakros is a special place. Cretan people are divine 💚

Feeling beyond blessed to have gotten time here. A home away from home.

Big love, Karen x

Yesterday, I had the privilege of mc’ing 2 of the panel discussions @greenearthorganics1 first ever festival!

Like many of you, I’ve never been to visit Kenneth’s farm as I have farms on my doorstep, here in Mayo that I buy from every week.

Stepping into the farm shop was one of the most memorable experiences I will ever have! The bounty of veg and organic household staples blew me away! If you’d ever like to experience a food household buying experience to contrast the regular supermarket experience it is definitely worth the drive!

I left the festival thinking this -

The government knows it needs to change food policy in Ireland. Until the government holds itself accountable to our health, more and more people will become sick from utterly preventable disease. This is grossly unacceptable.

As individuals, we can inspire change amongst our family and friends. Helping people to change does not happen through judgment. It happens through kindness.

There has been so much to reflect on since yesterday.

@sambabygiselle spoke eloquently at the end of the day on how cultures that are not ours, are also not ours to judge. I really adored her point on that. Especially as we hadn’t accounted for it up until that point.

And so whilst we wait for governments and companies at large to start playing honest, we can cook and bake for one another with foods that we love. Foods that sustain and nourish us because they have been farmed with the utmost accountability.

I find organic farmers to be some of the planet’s most accountable. Thank goodness our landscape is dotted with many. And those many, though a lot of the time it doesn’t feel like it, are absolutely inspiring more and more people to farm in this way.

An absolute privilege to share the stage with @jcdal @cheftomhunt @mickkellygrows @littleloucooks @iampatkane and @sambabygiselle

Thank you so much @greenearthorganics1 for an outstanding day! I take my hat off to you and your already 20 year legacy 💚

Lads, this shit’s important. Vitamin B1 converts carbs to the food our nerves depend on.

If you are dealing with an issue of the nervous system, if your brain is foggy, if your nerves are at you, then this ratio of Vitamin B1 : Carbohydrate is an important one to stay mindful of.

Wholegrains are the best addition you can make to your plate to safeguard your nervous system today.

Your body uses the B1 found on the outside of the grains, nuts, seeds and pulses you eat to convert the carbohydrates found within the skin of the food into energy. That energy is super essential to your brain. In the absence of Vitamin B1, carbohydrates cannot be converted into food that keep your brain, nervous system and heart functioning normally. This is serious shit lads!

When we eat the outside of our food and prepare that food in ways that make it digestible, our nerves gain access to the usable carbohydrates they use every second of our life to keep us alive.

If our diet is heavy in white flour, white rice and other white foods that have been stripped of their bran and germ, we end up with an unworkable ratio. The heavy amount of carbohydrate in these foods demands more Vitamin B1 to metabolize it. And so all we can hope for, is that there’s something else on the plate that will supply us with B1. Pork is the next best source of Vitamin B1 to the germ and bran of grain.

We always get our pork from our pals @lunasafarm ❤️ for an amazing source of B vitamins.

@glenbrookfarmcork in Cork raise exceptional animals too. Strongly recommend following Peter over there. 💫

Wholegrains and pork for breakfast. Now that’s a meal worth having! ☺️

Sunday @madyolkfarm

We’ve been acquiring lots of herb and salad plants on our egg collection trips to Brian’s farm 💚

The farm shop @madyolkfarm is abundant in the most glorious root vegetables and seasonal feed. I also love being able to grab a @gleannbuifarm kefir and a @st.tolaqueen cheese 🤤

If you’re anywhere near Brian’s farm in Galway this is your strong recommend to make @madyolkfarm a part of your weekly shop. Divine nourishment from people working the land with the utmost care and love ❤️

A real privilege to spend time there and source our eggs from there too 🥰

A great source of omega going into each of your loaves and scones from Co. Galway each and every week.

SOURDOUGH PIZZA ❤️‍🔥

We now have a Pizza Flour Blend in stock to buy online or from our bakery in Westport. Each bag of flour comes with our pizza recipe which is SUPER easy on the gut.

A mix of Turlough’s hard work from Co. Monaghan @mannaheritagemill 🌾

Alongside our bag of Pizza Flour you will need 400g of wholegrain rye starter to form your dough.

Ideally you will cook your pizza in a pizza oven or BBQ with pizza stone where the temperature reaches 400 degrees celsius.

If you are absolutely DYING to make pizza but have neither a pizza oven or BBQ, then you can use your oven if it reaches 260 - 300 degrees celsius. The pizza will just need a longer bake.

When using your oven, the oven will need to be on at its highest temperature for 30 - 60 minutes with a pizza stone in there that whole time or a sheet of metal. You then need to bake the pizza on the stone or metal for 8 - 10 minutes approximately.

It takes a few rounds to understand the bake time on whatever cooking device you use. Whether it be a pizza oven, BBQ or oven. As with everything in life, patience is a virtue and all that 😅 Do persevere as this pizza is really very good thanks to the tireless work of Turlough @mannaheritagemill 👏

We made some at the TEACH today with @twofieldszakros garlic oil, burrata, @glasrai_farm courgette and rocket. Sublime! 🤤

Pizza food is comfort food. What better way to soothe and nourish our brains 💆‍♀️

Find it online in our Dry Blend section under Shop Our Food.

Big love,

@mannaheritagemill Wholegrain Heritage Pizza 🍕

Getting ready to pizza party hard this August! ☀️

What an absolute joy to be making some of the best dough we’ve ever eaten with Turlough’s Monaghan grown heirloom grains. Seeing flecks of bran go through pizza dough is not a regular occurrence and it’s a real pity as the bran brings so much flavour and NUTRITION 😅

The chewiness, the flavour, the aftertaste, the aroma, the way it feels in your tummy - just sublime!

I’ll be sharing the recipe soon for those of you not in Westport.

Topped with ingredients produced by our pals, this all out organic heritage pizza provides you with enzyme activity and nutrients you won’t find in a jar or bottle 😅

I LOVE PIZZA! ❤️

Party coming soon at the TEACH!
Big love, Karen

Why you so brown? Because of the happy tummy diet.

I didn’t always brown so easily. As soon as I applied simple science to my diet, my whole body radically changed.

Burning of the skin is caused by free radicals. An antioxidant-rich diet manages free radicals.

Healthy fats, protein and Vitamin E boost your body’s defence from the inside.

Between the organic Brazil nuts, almonds and walnuts in this loaf alongside @twofieldszakros olive oil, The Happy Tummy Loaf is for me, my skin’s perfect food!

Taken every day with every manner of toppings, I know I’m doing something deeply protective for my health in eating this bread ❤️

If there was one addition I’d recommend everyone make to their diet, this loaf would be it.

Healing from within.

In yesterday’s newsletter I discussed physical and emotional homeostasis. Mechanisms through which our bodies’ maintain themselves.

We have evolved with complex processes that keep us stable. The neurotransmitters that are responsible for safeguarding our emotional homeostasis have big appetites.

3 ferments that I particularly love to feed my brain and nervous system are -
The Happy Tummy Loaf
Teff Scones
Sourdough Buns

I cannot imagine my life without them. I feel better on them.
My heart, mind, skin, never mind my colon feel totally and completely nourished through them ❤️

How lucky are we to have such extraordinary women making them all by hand ✨

S U N S C R E E N and M E. I eat mine.

My personal journey with rosacea has been a tricky one. Having had it since birth, it’s become clear that it is not going away. And so I had management choices. I have spent an insane amount of money over the years on dermatologist skincare without effect. One day I stopped. And then I noticed my skin calm and become visibly better.

Complicated skin issues really need addressing from within.

My rosacea confused me because it became both better and worse in the sun.

My time spent in sunnier climates where I would eat tonnes of fresh fruit and nuts meant my complexion would glow. Back in Ireland, a different story.

Since making soaked and roasted nuts a part of my diet my SKIN HEALTH has changed for the better. And come summer, the vitamins I am intaking through fruit mean my skin has more support in managing the free radicals that cause our skin damage.

Eating my skincare through high fibre, vitamin dense nuts has radically improved how I now feel in my skin. I will always have those annoying and persistent red patches I was born with but on the whole, I now have skin that feels more me.

Now my skin browns easily and I’ve kept my rosacea stagnant.

Soaking and roasting your own nuts is one of the best monthly practices you can do for your health.

If you’d like to learn my approach you can go to the LEARN WITH US tab on our website and grab the online SOAKING COURSE for just €30 now.

Out of all the money I’ve spent on trying to feel better in my skin, organic nuts was my MOMENT! Nuts with the skin on of course 🥰

Right, back to this delicious bowl of SKIN and GUT protection.
