Toasted ciabatta, mushroom and truffle pesto, poached eggs, lambs lettuce and chive oil

Mushroom truffle pesto by @saucerer.uk bought from @healthandremedy chard somerset

This was a spur of the moment brunch off the back of just talking to @robsfood73 with his ethos of levelling up simple ingredients.
Then my chef brain kicked into action and thought dont be lazy😂😂

So from just poached eggs on toast..... i added the pesto from @saucerer.uk , lambs lettuce @waitrose Then i used the rest of the lambs lettuce in with chives to form a quick herb oil.
Lovely eggs from @waitrose and then poached them
Seasoning at the end

And there it is, simple ingredients eggs on toast levelled up. To me, seen as im a chef its a case of not being lazy😃...
But If you struggle for ideas or just fancy browsing great ideas to level up your daily dishes then head on over to @robsfood73 👍

Also my nephew @harvey_slade_ helps me alot in the backround and i think my reels are getting better gradually. This is because of his help there is no question. His new youtube series @_mintville is the proof in the pudding so big shoutout to @harvey_slade_
