Toasted ciabatta,mushroom and truffle pesto,poached eggs,lambs lettuce and chive oil

This was a spur of the moment brunch off the back of just talking to @robsfood73 with his ethos of levelling up simple ingredients.
Then my chef brain kicked into action and thought dont be lazy😂😂

So from just poached eggs on toast..... i added the pesto from @saucerer.uk , lambs lettuce @waitrose Then i used the rest of the lambs lettuce in with chives to form a quick herb oil.

And there it is, simple ingredients eggs on toast levelled up. To me, seen as im a chef its a case of not being lazy😃...
