5 years of EaTo.

We sat down with our owner, Matt, to ask him a few questions about how we got here and what this milestone means to him.

What was the original concept for EaTo?
It was meant to be an Italian market with olive oils, fresh bread, cheeses to go, and QR codes. But our guests wanted real connections, service, and a local spot with good food. So we listened.

What has been the biggest challenge?
Learning how to lead. It took time to find my leadership style, communicate our vision, and admit my flaws. But, I care deeply about our team and culture.

What does 5 years mean?
Everything! Opening mid COVID was tough, and we had some dark days, but our team and guests held us together. They’re the glue.

Favorite menu item?
Matt: The chicken parm, focaccia & ricotta, and our off-menu Cacio e Pepe (if you know, you know 😉).

Favorite memory?
Partying with our team at the State Fair every year or our Holiday Party Drinking Games Bonanza. But also, seeing a host become a manager, a guest propose to their partner, and hugging our team when I see them after a vacation. The small, impactful things are the best.
