🌶 After decades of experimenting I have officially perfected the iconic Chile Relleno. FANTASTIC.
1. Fresh roasted Poblanos stuffed with Mexican Oaxaca and cheddar cheeses
2. Tempura battered and fried in Avocado oil
3. Topped with a brothy tomato red chile cilantro sauce and queso fresco

This has always been my favorite dish to order at Mexican restaurants, however, the quality has quickly gone downhill and less authentic. Most places use egg roll wrappers VS batter and cheap canned chiles and/or that weird orange "shredded Mexican cheese blend" (hate this stuff). And the sauce is far from the traditional brothy tomato cilantro sauce I experienced in Mexico.

SOOOO I make my own now.

Homemade Bagels 🥯 😋
Credit goes to my Man for the recipe - he is an amazing baker oh my. I had to give a go and try for myself. Worth every effort!
First you make a yeasted dough. Proof it. Then shape the bagels. Let rise again. Boil in salted soda water. Coat in the seasonings. Then bake.
They freeze fantastic and we make them ahead of road trips for easy filling food on the go.

This place may become a State park which would not be in the best interest of the locals, and the Native sacred sites within. Those is Colorado and Garfield County PLEASE vote NO and do what you can to support the locals in there being NO State park for Sweetwater Lake. Keep Colorado Wild and free.

Got rid of 95% of things I owned over the last year. I consolidated everything to fit into a Tuff shed. It took time to go through and figure out that which served this next era. Turns out all I need is my canning equipment and jars, kitchen gear, camping gear, sports stuff, medicine making, herbs, and functional clothes. And my beloved seeds I have been creating these last 8 years. I propagated all my favorite perennials from the gardens for their next journey. Minimalism is the path to freedom. It is a freeing feeling to not be tied down to furniture and meaningless stuff. My love and I traveled for half the summer and fall, taking every day with little planning or itinerary. We let ourselves be our guides and had the most amazing adventures to absolutely gorgeous places.

A gardener knows to trust the seeds planted. That they will sprout. And grow. Surrendering worries and all doubts to the Earth wisdom. Letting cycles and plant intelligence be the guide. For we reap what we sow.
Last spring, my seeds (seed saved @ many generations in) took 3 weeks to sprout up in the gardens. Usually it takes 4-5 days. I was shook and disappointed, thinking I would have to reseed. I had never had them take SOOO long before to come up. What was going on ??!! Were my seeds bunk and not working??!! However, I continued watering them, nurturing their soil and weeding their beds. And sure enough they all sprouted bringing me the most succulent, delicious, & abundant veggies yet!!
The message was clear to me. TRUST and KNOW and BELIEVE in your seeds. Whether in the garden or the ones we plant in our lives. When the conditions are right, they WILL emerge full of life and ready to thrive.
Last spring was full of strange weather and wonky temperatures, the seeds knew the right timing of when to emerge for optimum success.
It is the same in our lives, when energies are in ripe alignment our seeds will germinate into reality.
✨💚These late summer days of harvest and fruition. Long patio nights enjoying the fruits of my labors. Stocking the pantry with garden foods, preserving the herbs, and eating like a queen. Welcoming Fall, harvest season, and the shifts that happen within my gardens and therefore within all my being💚✨

💚💥I Am Summer Love 💥💚
Summer solstice . Garden at a climax . Dark leafy greens deep and succulent . Herbs thriving wild and self sown . Cultivating seeds for the future . Offering made from every edible and medicinal plant grown.
THEN
The next day a tornado came through 6 miles away with crazy winds and pelting hail. Herbs and gardens were beaten down some stripped to their cores. Devastation. The ebb and the flow. Wheel of Fortuna always turning. To be continued…

Late Spring Gardens 💚🙏🏼 Blessed abundant rains and fruitful seeds have brought the best gardens yet. Succulent lettuces, rich greens, and juicy perfectly nuanced radishes. Herbs doubling in size. Arugula gone wild. God is good 🙏🏼✨
Life has been heavy and heartbreaking these last few weeks. My garden brings me peace and purpose. It heals and soothes my overwhelmed tired soul. But this too shall pass. I surrender and accept. I give myself grace. I return to my faith, yet again ✨
