After 14 years of working in international brands like Four Seasons, Taj, St. Regis, Le Meridien, Westin and Ministry of Crab and then moving to Elephant & Co- opening restaurants, fixing broken operations, and training teams across all brands. I've started something of my own.

Here's why.
Every restaurant I've walked into has the same story. The food is good. The space looks great. The owner is working 14-hour days. And yet, service is inconsistent, the team turns over every 6 months, and the same problems show up every Friday night.
It's almost never a people problem. It's a systems problem. Nobody was ever trained to build the systems.
BCG exists to fix that. We work with restaurant and bar owners on three things:
1. Operations: SOPs, recruitment, checklists, audits that make service consistent whether the owner is on the floor or on holiday.
2. Leadership: formal training for managers who got promoted because they were good servers, but were never taught to lead.
3. Pre-opening: so your next venue opens with a playbook, not in panic.

Nobody claps for the things you decided not to do. They should.

When you walk into a bar, you see the final version, the drink in your hand, the plate on the table, the room buzzing around you.

What you don't see is everything that got left behind to get there.

The recipes that tasted fine but weren't right. The garnish that looked great on Instagram and made no sense behind a busy bar. The layout that worked on paper and fell apart the moment we walked through it. The ideas we loved and cut anyway because they weren't true to the place.

Our first project, Suffering Barstard, had one clear brief: build a proper watering hole in a city that has very few of them left. A proper bar. No pretence.

Getting that right was less about adding and more about taking away. Every "yes" on the menu sits on a pile of "no"s. Every choice in that room was earned by the ones we threw out.

Fourteen years in this industry have taught us that knowing what not to do matters more than knowing what to do. Anyone can add. The real work is in the edit.

Judging a cocktail competition is a strange kind of hard. You're not tasting for what you like. You're tasting for what holds up.

Spent a beautiful Monday at The Ritz-Carlton, Pune, judging the Pune leg of Rising Star, Marriott's internal cocktail competition, run across their properties worldwide.

What separated the top of the field wasn't the most complicated build. It was the ones who could tell you exactly why a drink was the way it was, and then make it the same way twice. It was great to see young ambitious bartenders putting themselves out there.

Good reminder that the bar side of this business is still, at its core, a craft. Nice to see it taken seriously.

Kissa means story. That’s the whole idea, every set is one, told through Indian voices and melodies moved onto disco, afro and house.

To be very clear about what this isn’t: it isn’t a Bollywood night. Hard no. Nothing here is a remix of a film song for the sake of it. It’s the tunes and vocals that are already in your memory, placed over something built for a dancefloor.

I have been collecting and presenting this kind of music for a few years now. If you’ve been to one, you know. If you haven’t, tomorrow’s a good place to start.
Expect the super cool @brk_thru to take over the decks as well and take this Saturday night even further.

The first video is very special. These were the very first set of people to dance while I played. I was soooo happy I got the CCTV footage as memory. Years have passed and I am still trying to fill up dance floors.

How did you spend the last few months?

Life is more meaningful when you focus on fewer things.
2026 focus is building more meaningful venues in Pune and even more meaningful relationships. And spending more time with Kanye and Kardi.

List of fewer things-
Site visits, equipment ordering, attending bar take overs, promoting my own IP, chilling with Doma Wang, waiting for payments pending for over 8 months, attending way too many gigs at Soy, judging a cocktail competition at Ritz, trainings, convincing new clients to hire me, and actually spending time with people. by @hereissas

Here are some snippets from my 58 page dissertation submitted in 2013. It speaks about how "decision making" and the "willingness to pay" are affected when guests are offered limited choices and A LOT OF CHOICES.

We went from seeing restaurants that have massive 15-20 page menus to literally two sided sun boards in the last few years.

One of the hot topics of discussion in 2026 is how many items a restaurant/ bar/ cafe should have on their menu.
Key words on all F&B influencers' pages- "decision fatigue" and "limited inventory".

After working in 5 star hotel chains across Mumbai, Bhutan and Pune, I joined a small 60 seater restaurant in 2019 which had 60 cocktails listed on their menu. YES 60! No count of SKUs and staff taking inventory of thousands of items. Reason- guests keep complaining about having less options.

Over a period of time we reduced those 60 so called signature cocktails. Tightened the menu based on actual sales figures with the help of the BCG matrix. Over the period of 7 years (this includes COVID), the same company now runs 5 different brands with a total of 6 venues in 2 different cities.
