Judging a cocktail competition is a strange kind of hard. You're not tasting for what you like. You're tasting for what holds up.

Spent a beautiful Monday at The Ritz-Carlton, Pune, judging the Pune leg of Rising Star, Marriott's internal cocktail competition, run across their properties worldwide.

What separated the top of the field wasn't the most complicated build. It was the ones who could tell you exactly why a drink was the way it was, and then make it the same way twice. It was great to see young ambitious bartenders putting themselves out there.

Good reminder that the bar side of this business is still, at its core, a craft. Nice to see it taken seriously.

Thank you @theritzcarltonpune, @vedantshetty6 and @priyanka_chhajta for having us. And thank you, @samadhan.mixologist & @_moly_who for being such great co Judges.

Khus-bu e Toki | The Scent of Time
In Japan, Toki means Time—a harmony of old and new. In Rajasthan, our time is defined by the sun, and our soul comes from the earth.
Bringing these two worlds together: Khus-bu e Toki (The Scent of Time).
I’ve paired the silky, mellow notes of Suntory Toki Whisky with a custom, cold-infused Vetiver (Khus) Liqueur to capture the deep, cooling spirit of the desert. To bring that iconic local punch, it’s topped with an in-house spicy chili lemonade soda—a sharp, fiery twist on our classic street-side Nimbu Soda.

Behind the Prep:
Cold-Infused Khus Liqueur:
Method: Cleaned raw vetiver roots (khus) cold-steeped for 48 hours to extract pure, earthy, and woody aromatics without taking on any harsh heat, then balanced with rich simple syrup.
Spicy Chili Lemonade Soda:
Method: In-house spicy chili lemonade soda, force-carbonated for max fizz and a bold Nimbu Soda kick.

The Highball Build:
Glassware: Highball Glass with clear block ice
Ingredients:
45ml Suntory Toki Whisky
15ml Cold-Infused Khus Liqueur
Top up with Spicy Chili Lemonade Soda
Garnish: Raw Vetiver Root (Khus)
Method:
Build over a crystal-clear ice block in a tall highball glass.
Pour Suntory Toki followed by the Khus liqueur.
Top gently with the spicy chili lemonade soda.
Give a single lift with a bar spoon to combine without losing fizz.
Garnish with a raw vetiver root and serve!
Vocal for Local. Timeless Tradition. Precision meets Rugged Soul.
