Giusti vermouth has a story that goes all the way back to the 17th century, to a family from Modena in northern Italy whose world revolved around making balsamic vinegar.

What makes their vermouth special is not only the blend of herbs and spices that gives the wine its character, but also the ageing process in the family’s old wooden barrels, once used for balsamic vinegar.

So in a way, every bottle carries a little of a family story that has been passed down for centuries. by @herzl16

Matcha🍵 bread🥐 pudding🍮 recipe

CROISSANT PUDDING
• 450g (8-10) old croissants
• 500gwhole milk
• 50g sugar
• 2 eggs + 2 extra yolks
• 80g heavy cream, lightly whipped to soft peaks

METHOD:
Whisk together, milk, eggs, yolks & sugar
Add the whipped cream
Combine and soak: Add the croissant cubes and gently fold to coat, or place them in a baking dish and pour the custard over. Press down gently so every piece absorbs the custard, then leave to soak for 15 minutes.

Bake at 160c for 40 mins
Chill before slicing & grilling with butter

MATCHA ICE CREAM
• 570g whole milk (3%)
• 185g heavy cream (38–42%)
• 116g white sugar
• 33g skim milk powder
• 30g simple syrup (50%)
• 22g glucose
• 11g dextrose
• 10g ceremonial or culinary-grade matcha powder
• 20g ice cream stabilizer

METHOD:
Mix the dry ingredients: In a bowl, thoroughly whisk together the matcha powder, milk powder, dextrose, atomized glucose, stabilizer and half of the sugar to prevent lumps.

Heat the liquids: Combine the milk, heavy cream, simple syrup and remaining sugar in a saucepan. Heat gently to around 40°C / 104°F.

Incorporate: Gradually rain the dry mixture into the warm milk while whisking vigorously.

Chill as fast as possible

Use whichever ice cream machine you have
