The secret to our Wagyu Beef Galbi starts long before it hits the grill.

We turn leftover rice into shio koji by inoculating it with koji spores, letting it culture for several days before fermenting it with onions, water, and salt for over a month. This process creates a deeper umami flavor and more tender bite ✨
