It’s more than 1 year since my 4th book The World Atlas of Honey was released. Thank you to everyone who purchased, posted and shared it. You are the reason it traveled around the globe. This was an intense research project that I was asked to write and it almost broke me. There were 3 editors and peer reviewers to answer to weekly. In the end the designers did an amazing job, those gold foil embossed bees! Writing a book is a monumental task and that’s with a literary agent representing you. If you’re thinking of writing a book, the fact is you write a proposal and when it’s accepted, by a publisher then you write the actual book. Unless, you are self publishing. Then you are given a timeline of when chapters are due. Yes, there is an advance paid in chunks to authors and royalties on sales but no one’s retiring just yet. Write a book because you love writing or you have a passion you are compelled to share with the world. One of my favorite quotes is by Robert Haas ~ “It’s hell writing and it’s hell not writing. The only tolerable state is having just written.” by @honeysommelier

Goût de terroir is a French phrase that translates literally to "taste of the soil" or "taste of the earth". It refers to the distinct sensory profile—including flavors, aromas, and textures—that a honey, wine or agricultural product (like cheese or coffee) takes on due to its specific geographic origin. by @honeysommelier

I thought I knew everything after passing the L3 exam…but in fact, it is time and experience that builds the expertise. Practice daily by growing your sensory experiences and descriptor vocabulary. Be the honey expert you trained to be! Just practice to keep your senses sharp. by @honeysommelier

The Honey Connoisseur is 13 years old and in its second edition. It is still the only book for identifying and profiling US honey. It has been translated into Arabic due to the fact that honey is held in the highest esteem in Middle Eastern countries. Have you read it? by @honeysommelier

🌟 New Week New Guest 🌟

🍯 Honey is so much more than something sweet.

This week on Culinary Confidential, I’m diving into the fascinating world of honey with CARLA MARINA MARCHESE — beekeeper, author, honey sommelier and one of the leading voices in honey sensory education.

Carla founded the American Honey Tasting Society, bringing the Italian tradition of professional honey sensory analysis to the U.S., and is an accredited instructor with the Italian National Register of Experts in the Sensory Analysis of Honey. She’s also the founder of Red Bee Honey and the author of four books, including Honeybee: Lessons from an Accidental Beekeeper, The Honey Connoisseur, Honey for Dummies and her latest, The World Atlas of Honey.

Because just like wine, honey has terroir, varietals, aromas, textures and completely different flavor profiles depending on where it comes from and what the bees are foraging. 🍯🐝

We’re tasting, pairing and discovering what makes a truly great honey — and why you may never look at that little jar in your pantry the same way again.

Texas, are you ready to taste and evaluate honey using sensory analysis? We are going to smear, stir and smell honey like never before. But first we will practice our olfactory skills and sharpen our senses, learn the difference between taste and flavor, and describe the indescribable…put words to what we smell and taste. After my class, no one will describe honey as sweet, yummy, delicious or complex ever again. We will elevate the honey tasting experience so that we can identify fraud, adulteration including heat treatments, blending mud and cheap imports. The method is easy to learn but takes years to master. Your journey begins on August 25th! Register at Trinity Valley Beekeeper Association. @tvbees by @honeysommelier
