“Humans have been hunting- and savoring honey for over 9,000 years. Throughout history, various cultures have valued fresh honey for its health benefits and culinary uses, going to great lengths to procure it. To hold up a frame of capped honeycomb, glinting as the sunlight shines through it, is to understand that harvesting honey is as impressive as it is rewarding. This is the magic of honey.” Excerpts taken from The World Atlas of Honey by C. Marina Marchese, honey sommelier and guest on our latest Love The Bees Podcast. Throwback to March 9th! Sheba Bees held the 1st ever Yemeni honey tasting in NYC! 🍯✨

Not only did we sample delicious Yemeni Sidr honey with the guidance of top honey expert @honeysommelier , but we also indulged in mouthwatering Yemeni coffee and tea with Hors d’oeuvres. As the adults savored the flavors, the kids had a blast playing and adding their joy to the mix. It was a day filled with sweetness, appreciation, and unforgettable memories.

Guests also got creative with postcards from Yemen, created by @thiyazen9 . It was a joy to see everyone coloring and expressing themselves amidst the warmth of building and connecting a Sheba Bees community here and back in Yemen.

Check out these photos capturing the extraordinary moments! 📸🐝

The fantastic world of honey and the many things you probably don't know about it!

Did you know that almost all beekeeper’s honeybees are Italian?

Or that only the female bee produces honey and she produces a mere 1/12 of a teaspoon of honey during her lifetime!

Italy has a long history of honey tasting, using the same sensory analysis techniques used in wine tastings: sight, smell and taste.

Not to mention the Royal Jelly that bees produce!
Don't know what it is? Tune in to the episode to learn this, and so much more from the one and only @HoneySommelier, Marina Marchese!

Head to the Flavor of Italy website for lots of great links, gorgeous photos of honey and bees... and a tasty recipe!

What a whirlwind! I’m still digesting (physically and mentally) all that we’ve accomplished in the last week in Bologna, Italy.

I had the pleasure of embarking on the journey of Honey Sensory Analysis with 18 individuals from around the world, under the guidance of the best in the industry - Raffaele Dall’Olio, Gian Luigi Marcazzan, and Marina Marchesa. Over the course of 5 days, we learned how to disseminate the tastes and aromas of 18 different honeys, along with the knowledge of recognizing impurities and adulterations.

My mind has been blown and I am so so proud of myself and fellow classmates for investing in themselves and aspiring to keep the beekeeping industry honest. I cannot wait to return for the two remaining courses to complete my training as a honey sommelier ✨

Creamy white honey from high altitude meadows in Kyrgyzstan. Exquisite delicate aroma of gardenias. Rich with a slightly waxy mouthfeel. Initially mildly sweet with a buttery fullness punctuated with high notes of toasted pecan. Moderate persistence. A really elegant honey. Rating 10/10 thanks Lowell

Ohio Proud! Hometown Honey from Wilmington Ohio. Really interesting aroma of ripe strawberries with that faint woodsy scent of a handful of fraises du bois picked in an alpine glade. The aroma carries over into the flavor which is accentuated by submicroscopic crystals embedded in a gummy matrix. Minimal balancing acidity. No persistence. Rating 9/10

Polish buckwheat honey. Intense metal aroma. Almost completely crystallized with very hard crystal structure which is almost oozing a dark brown black liquid. Extremely intense flavor of almost rotten citrus which then fades into a tar like petroleum miasma. Interestingly that goes away almost immediately leaving a fairly pleasant clover molasses. Moderate persistence. Rating 3/10

There’s nothing like holding honeycomb dripping with honey straight from your hives.

What’s your favorite part about beekeeping?

Honey is the icing on the cake, but even more so, we love seeing the hives thrive.

If this means less honey for us to eat ourselves or share - so be it. Healthy hives matter most.

Thank you for supporting YOUR local beekeepers. We work hard to keep the bees healthy and thriving in our communities. We appreciate how you #shoplocal and #eatlocal all to #supportlocal 🙌🏻

Siberian poly floral honey. Pleasing floral aroma with a tiny hint of gardenia. Microscopic crystallization in a delicate matrix. Initially pleasantly sweet with a balanced note of acidity reminiscent of the tannins of a good port. On the second and third tasting I got the faintest hint of a late wood smoke flavor. No persistence. Rating 7/10 Thanks Lowell
