for the Kikkoman Wok Creator Challenge @kikkoman_austria
i made my first zwetschgenknödel - with soy caramel ✨

i loved how the caramel changed with just a little soy sauce: sweet, salty and slightly tangy with the plums.

for the soy caramel:
- 80 g sugar
- 20 g butter
- 80 ml cream
- 1 tsp @kikkoman_austria soy sauce
melt the sugar until golden, add the butter, then carefully stir in the cream. finish with soy sauce and taste as you go - a little really makes a difference.

serve with warm zwetschgenknödel and toasted breadcrumbs.

episode 2 of my market-inspired series 🍄‍🟫

at brunnenmarkt, these chanterelles immediately caught my eye, so obviously they had to come home with me.

i turned them into miso chanterelle pastina creamy, buttery and packed with umami.

the idea of this series is simple: i go to a market, choose whatever seasonal ingredient inspires me, and build a dish around it.

here’s how my day went 🤍
it’s definitely not every day like this, but sometimes i just stop and realize how grateful i am for where i am right now.

also got my first ever goodie bag as a food creator at an @afba_at event 🥹 maybe it sounds like such a small and normal thing, but for me it was actually really special. a tiny milestone that made me feel like maybe i’m doing something right.

i have a small problem: i get way too excited about seasonal produce at the market 😅

so i decided to turn it into a series.

i’ll visit different markets, see what catches my eye, and create a dish inspired by what i find.

this year, i’ve done many things that once felt impossible - but somehow, i didn’t always notice how brave i was being.

i started over.
i quit some things and finished others.
i learned new skills and felt like a child again - awkward, curious, and unsure of every step.

every time, i was scared.
but every time, i became a little stronger.

so let all these “wtf” questions remind you to stop waiting, overthinking, and only dreaming & push you towards something bigger 🤍
