Cooking outside over open coals reconnects us to the roots of how it all began. The smell of the wood smoke, the time it takes to tend to fires, and joy of being outside. ICC loves these shared gatherings.

A Kanien’keha:ka from the Wahta Mohawks First Nation near Bala, Ontario, Chef Chris Commandant is driven by a passion for preserving and sharing Indigenous culinary traditions. His work extends beyond the art of cooking—he is deeply engaged in conversations around Indigenous food sovereignty, food security, and traditional cooking methods.

His classical training enables him to seamlessly blend Haudenosaunee culinary heritage with contemporary techniques, crafting innovative dishes that honour the flavours and stories of his Muskoka terroir.

Chris founded Indigenous Culinary Canada as a way to provide education, training, Culinary support and a variety of Indigenous focused services.

Creative ideas, menu development and consultation. ICC is not a catering group, however provides culinary talent to existing establishments and institutions with culinary infrastructure. The idea is to work with others to include Indigenous offerings, team education, and Indigenous ingredient sourcing. I provide educational discussions on Indigenous Food Security and sovereignty, and its relationship to the Culinary Scene in Canada. Education is the key to breaking down barriers, showcasing Indigenous ingredients and suppliers, dispelling myths and stereotypes surrounding our foods, and introducing everyone to a rich history of Indigenous Food knowledge. General inquiries and request for services are always accepted and encouraged.
