Theory is great, but putting it into practice is even better. Low-impact cocktails deserve to be their own category. 💁🏻‍♀️🍸🧠✨ taken in San Francisco, California by @instagramless_karen

When you love water kimchi, but fermentation doesn't always love you back, quick pickling can save the day.

Let's make a low-impact Water Kimchi Martini with sesame washed gin and my daikon radish bitters, made without the second maceration process.

What happens when bartending’s favorite shortcut to brightness is taken off the table?

For Karen Tartt @instagramless_karen the answer was not less flavor. It was a more expansive way of building it.

After being diagnosed with chronic vestibular migraine, Tartt began reconsidering what eating and drinking could look like for her. Through Clear Spirit & Mind, she now creates migraine-conscious drinks by breaking citrus down into the individual jobs it performs: acidity, aroma, bitterness, color and lift.

Rather than searching for a one-to-one substitute, she reconstructs those sensory cues using acids, hydrosols, hops, fruit and other ingredients. Her work has since grown from pop-ups and programmable menus to a recent collaboration with Novo Fogo on its citrus-free Açaí Berry RTD.

Her drinks are not presented as universally “migraine-safe.” Triggers are highly individual. Instead, Tartt advocates for greater transparency, informed choice and a more curious approach to hospitality.

This is the first installment of Tastemakers, our new monthly interview series spotlighting brilliant hospitality professionals doing things differently and moving the industry forward.

July, what a month! 🤩✨️🥂
#BeBoldBeYou #July #Flowers #Dream #Summer

I received so many flowers this month 🥰 The most fragrant tuberose and these are Big Kiss Yellow Flame Gazania 🏵 They close up at night and open in the sun 🌞

I'm SO excited to see an easy-to-use infused syrup reach the market. Thanks for the fun times, @theherbsomm 😄🌿✨️

Thanks so much, @ashley_ann_photos for a super fun photoshoot 📸🤩🥂✨️

Super huge thank you to Emblem PR, Hansel Bauman, @nikaido.shochu and @thathadagirl for everything! Our audience had the best questions! I feel so lucky that many shared their dreams to create spaces that will be inclusive with intention. 🥹 Thank you for your time, attention and encouragement 😊🥂✨️

Ah! This was my favorite cocktail at @alyssa_bonk 's Friends & Fam Brunch 🥂

I almost always run into someone I know when I'm flying. This time I was grateful for a delay right by the gate so I could spend some time with friends I hadn't seen in a while 🥰✈️🥂✨️

Happy Birthday, @hatfieldt 🥳🍾🥂✨️ @tevisaur 😂😂

Happy Birthday, @beccameow 🥳🍾🥂✨️ Love you so much! 🥰

My first time at Dore Alley! 🤩✨️💖

Ready to party after an outfit change and a chill out moment 🧘🏻‍♀️🌿🌫💧

Took me a while to find upstairs (Path Finding is a real access need, y'all! I'm lost AF most of the time 😂) but I had a blast dancing when I did! 💃🏻✨️💖

July is Disability Pride Month 🤩 It was extremely cool to hear Dennis Billups and Debby Kaplan give their first hand accounts of what the 504 sit-in was like at the @disabilityculturalcenter ✨️ The HEW Building, which we visited afterwards, still holds the record (26 days) for the longest nonviolent occupation of a federal building. Happy Shades for Migraine! 💁🏻‍♀️🕶😎🧠✨
